Frozen Chocolate Banana Bites

FrozenBananaBites-5+

People love to talk about the weather. It's just part of human DNA. We also like to complain about the weather. You know we all do it. I was running today with baby E in the stroller and I checked the weather channel and it said it was 85 degrees at the time. I ran and boy was it hot. Then I recalled the days I lived in Texas and ran in much hotter temps, but I am simply not used to them now. On the other hand I hate running when it's too cold. If it's under 60 degrees I want no part of it. It seems like when it's summer I am longing for the fall and when it's winter I am eager for … [Read more...]

Reese’s Peanut Butter Chocolate Chunk Cookies {Gluten Free}

ReesesChocolateCookies-3+

I'm so glad the guide to gluten free flours was helpful to some of you. I decided to experiment with one of my all-purpose flour mixes and make some chocolate chip cookies using leftover Easter candy. I don't know when Easter became this Holiday all about candy. I swear my kids got more on the neighborhood egg hunt than they did trick-or-treating. Crazy I tell ya! I am pretty strict with sweets during the week because a while back my kids went through a phase where they begged me for dessert all day every day. Child 1: "Mommmmm can I have a piece of candy (9:30am)?", Me: "no". Child 2: … [Read more...]

Double Chocolate Cheesecake for Valentine’s Day

ChocCheesecakeF-1

Every year on Valentine's Day my husband and I put the kids to bed a little early and enjoy a romantic home cooked meal instead of worrying about making reservations at some fancy restaurant. How is it different than any other night I cook? Well for one thing, the kids are in bed. We open a good bottle of wine or champagne and eat a meal that consists of food we don't have on a typical weeknight. There is no complaining, food throwing or spilled milk. It's lovely. I even put out nice place mats, linens and our nice crystal. Plus there is dessert...chocolate to be exact, always chocolate. … [Read more...]

Mini Cherry Cheesecake Bites

CheeryCheesecakeBites-3+

As magical as pregnancy can be, I am just about ready for this one to be over- 38 weeks, tired, uncomfortable and in need of a good workout (and a good glass of wine!). I am not even that excited about Holiday eating because there isn't much room in my belly for it. What I am saying is I don't think this will be my year of desserts. Maybe I will save the splurge calories for post-baby when I have room and am burning even more calories nursing. I do love a good cheesecake so I might make an exception for my favorite pumpkin cheesecake....but when I was thinking of cheesecake I remembered … [Read more...]

Christmas Cookie Round-Up

ChristmasCookieRoundUp3

I don't bake a whole lot of cookies year round, with the exception of good ol' chocolate chip cookies so when it comes December I LOVE trying new cookie recipes. Baking is just more fun in December. It's a fact. Cookies are great to bring to the Holiday table, office party or just to have on hand for Santa. Like I said in my last post, I always do roll-out sugar cookies and gingerbread cookies to decorate with the kids, but as you can see from this Christmas Cookie Round-Up, there are so many more options! I absolutely love these peanut butter kiss cookies . They are flourless, gluten … [Read more...]

Christmas Chocolate Drops with Dove® Chocolate

Christmas Chocoalte Drops | www.nutritiouseats.com

I love Holiday baking. I don't know why it's so much more fun than baking any other time of year. I suppose the excitement of the Holidays is in the air, Christmas music is playing (well maybe not quite yet), we are thinking about the time we'll spend with our loved ones. It's a magical time of year. Today I am sharing a cookie recipe, Christmas Chocolate Drops, that features DOVE® dark chocolate. The reason this recipe appealed to me is it only calls for 1/3 cup of flour and a greater quantity of chocolate and nuts. I could tell it would be chewy, chocolaty and nutty and a little … [Read more...]

Pumpkin Cheesecake Bars

Pumpkin Cheesecake Bars+1

Congratulations to the winner of the goodie food box Jessica F. you have been emailed! I finally busted out the pumpkin this week. I already feel like the month is off to a quick start so don't want to waste any time! Pumpkin desserts are one of my favorites this time of year- pumpkin cheesecake, pumpkin pie (of course), pumpkin swirl brownies and these pumpkin cheesecake bars. I just want to warn you that the majority of the dessert I post or will post over the Holidays are "splurge worthy" recipes. I don't do anything super crazy to lighten up desserts because I don't … [Read more...]

Chocolate Banana Soft Serve “Ice Cream” {Vegan}

Banana Soft Serve Vegan "Ice Cream"

Hi friends! I am back from vacation and am up to my ears in things to do. I haven't shared this news yet because I wasn't sure I wanted to, but I think I need whatever support I can get. My husband will be deploying soon (because of privacy/safety reasons I won't say when) but we have a lot to do before he leaves. I don't know how I will ever get through this "to do" list or being without him for that matter. Of course being pregnant makes this time much more difficult and emotional but I am trying not to think about it too much. For now, we just need to get prepared so that I can feel … [Read more...]

No-Bake Oatmeal Raisin Protein Cookies

ProteinCookies-1-3

I don't use protein powder very often, but my husband likes it in his smoothies and once in a while I will add it to mine too. We finally run out of our giant ol' tub that lasted about a year and I got to try a new brand and DELICIOUS flavor, sweet cream. I used Vi-Shape shake mix from Visalus. You would not believe the smell when I opened the bag, it reminded me of walking into an ice cream shop. So delicious smelling which I don't think I've ever said about protein powder! Ha! They're not lying when they say it's "the shake mix that tastes like a cake mix". The mix is low fat … [Read more...]

Chocolate Almond Microwave Mug Cake

Chocolate Almond Microwave Mug Cake

So I saw some lady on Martha Stewart, or maybe it was Oprah, like 10 years ago (I think, I don't really know when it was but it was a long time ago) and she was making individual microwave mug cakes. I thought the idea was kind of silly and figured the cake would taste pretty bad. Fast forward all these years, I don't know what possessed me to revisit the idea but I looked up recipes online and decided to make my own adaptation. Oh.My.Goodness. Why did I wait so long to try this? Several of the ones I looked at had 3 Tablespoons of butter (per cake). Yikes! And I am in no way implying that … [Read more...]
