Chocolate Almond Microwave Mug Cake

Chocolate Almond Microwave Mug Cake

So I saw some lady on Martha Stewart, or maybe it was Oprah, like 10 years ago (I think, I don't really know when it was but it was a long time ago) and she was making individual microwave mug cakes. I thought the idea was kind of silly and figured the cake would taste pretty bad. Fast forward all these years, I don't know what possessed me to revisit the idea but I looked up recipes online and decided to make my own adaptation. Oh.My.Goodness. Why did I wait so long to try this? Several of the ones I looked at had 3 Tablespoons of butter (per cake). Yikes! And I am in no way implying that … [Read more...]

Chocolate Covered Marshmallows & More Valentine’s Treats

Chocolate Covered Marshmallows-3

I totally on board with a little dessert splurge around the Holidays. I tend to gravitate towards chocolate but that's just me. I wanted to make an easy Valentine's treat for the kids and when I saw these heart shaped marshmallows I knew I needed to make something with them. I didn't have to think very long because as soon as I got home and looked at the back of the package I saw this easy recipe for chocolate covered marshmallows. Better than buying the store bought ones! I used a few different options for toppings- sprinkles, shredded coconut and candy hearts. Use your imagination … [Read more...]

Flourless Peanut Butter Kiss Cookies ( Gluten-Free, Dairy-Free)

Peanut Butter Kiss Cookies-1-6

Congratulations to Katie C. the winner of the Uncommon Goods Giveaway! I know you will enjoy the gifts as much as I did! Hi friends. It has been way too long. I am back from vacation in San Diego and totally behind schedule. I planned on blogging while I was there but I took my lap top which I don't usually blog from and it was so slow that I couldn't handle wasting precious vacation time trying to post. I didn't take many real photos but if you are on instagram you can see a few of the ones I did take while in San Diego (click on the IG button up top). We hit up Disneyland, California … [Read more...]

Happy 2nd Birthday Nutritious Eats + a GIVEAWAY!

Ice Cream Cupcakes-2

Nutritious Eats turned TWO last month. I meant to celebrate earlier but I've already mentioned how crazy October is for our family. I can't believe that I have only been blogging for 2 years yet I can't believe how fast the time has flown. I dreamed of starting this blog years before I actually did. I would sit at work (on my breaks of course) and look for available domain names. Of course all the potential blog names from my original list were already taken. It literally took over a year to find a free name and one that I really liked. Come to think of it now, it would be fun to look back at … [Read more...]

Easy Kids Birthday Cake: Chocolate Cake with Chocolate Buttercream Frosting

Boy Chocolate Birthday Cake-1-2

As I mentioned last week,my oldest son turned 6 this past week and we had a low key yet wonderful birthday celebration. We have seemed to make it a tradition to go to the zoo to celebrate L's birthday in October. It is always a fun thing to do that can take place during the day of the birthday if you have the party scheduled on a different day. The thing is this year, there was no party. We did the zoo on his actual birthday and Chuck E Cheese (per request of my son) the following day when my husband could take off work. Instead of a party we just spent the evening opening … [Read more...]

Popcorn Balls Perfect for a Halloween Celebration!

Popcorn Balls-1-4

Happy October everyone! I can't believe it is already time to get out my Halloween decorations. I absolutely LOVE this time of the year and am always shocked at how fast it flies by. When October hits, I immediately think of treats for Halloween, Thanksgiving and Christmas! I love baking in the fall and winter. Speaking of treats, did you grow up eating popcorn balls this time of year? Or did you ever get them in your Halloween treat basket? They are something that I have always seen in magazines but have just never made. This differs from most traditional popcorn ball recipes in that it … [Read more...]

Summer Memories and Chocolate Silk Pie

ChocMossePie-1-2

If you've read my about page you'd know that although I am a big fan of healthy eating, sometimes I like to splurge on things I wouldn't necessarily label as "nutritious" and since the name of my blog is Nutritious Eats I have to preface things by saying this pie is not one of those "nutritious eats". It's a chocolate pie. It's homemade so that's a plus, but at the end of the day it's still a rich, caloric chocolate pie. I LOVED every bite I took, however this is one of those recipes that is falling into my splurge worthy category. So far this summer has been off to a slow start- … [Read more...]

Move Over Girl Scouts: Peanut Butter Sandwich Cookie

PBCookies-1-2

I haven't posted a splurge-worthy recipe in a LONG time so look away if you are trying to fit into a bathing suit by the summer time. Look away if you are watching what you're eating. You're going to want one of these cookies now. And you will make a batch and want to eat them all and you will hate me for it. So if you like cookies, just look away. Pretend like you never saw this. For those of you who are accepting of the splurge, these cookies were awesome. They resembled the Girl Scout Peanut Butter Sandwich cookie, only WAY, WAY, WAY better. First off, they are much bigger, the … [Read more...]

A Holiday Treat for Santa: Blondies

blondies-1-2

Santa works hard all year to make Christmas day magical for kids all over the world. He needs something caloric and high fat to sustain him through the night, don't you think? Enter some ooey, gooey, fabulous blondies. This was my first time making blondies and I was shocked with how good they were. I just assumed Blondies tasted as boring as they looked. With toasted nuts, white and dark chocolate, there was no chance of that happening. If you're rummaging around your cupboards looking for ingredients to make a treat for Santa- try these. You'll likely have everything you need on hand! … [Read more...]

A Holiday No-Bake Treat: Butterscotch Haystacks

Haystacks-1

Whether you're making cookies for Santa, your neighbor or to enjoy at home, December is full of baking and treats. I, like many others, love to bake and eat sweets. How do I manage to do it and not gain weight? Easy! I exercise consistently and share my goodies. I also eat healthy meals daily which helps to balance out my calories. One thing I've been doing lately is to make a small plate of crudite (raw veggies) and dip for us to eat before dinner (usually while I am cooking). That way, I know we're getting extra veggies into our diet and it helps us to not feel so hungry for dinner (our favs … [Read more...]
