Do you give up on trying to eat healthy during the Holidays? I definitely splurge more than usual but I don't let all my healthy habits go out the window. It is possible to make it through the next couple weeks without gaining a ton of weight! I am over Mars Healthy Living today sharing my tips for Healthy Holiday Eating. Head over there to see how you can end the year on a good note! Before I go, I thought I'd share some family pictures we took back in August when I was 20 weeks pregnant. We took them with the intention of using them for our Christmas card because we knew it was … [Read more...]

Mini Cherry Cheesecake Bites

CheeryCheesecakeBites-3+

As magical as pregnancy can be, I am just about ready for this one to be over- 38 weeks, tired, uncomfortable and in need of a good workout (and a good glass of wine!). I am not even that excited about Holiday eating because there isn't much room in my belly for it. What I am saying is I don't think this will be my year of desserts. Maybe I will save the splurge calories for post-baby when I have room and am burning even more calories nursing. I do love a good cheesecake so I might make an exception for my favorite pumpkin cheesecake....but when I was thinking of cheesecake I remembered … [Read more...]

Christmas Cookie Round-Up

ChristmasCookieRoundUp3

I don't bake a whole lot of cookies year round, with the exception of good ol' chocolate chip cookies so when it comes December I LOVE trying new cookie recipes. Baking is just more fun in December. It's a fact. Cookies are great to bring to the Holiday table, office party or just to have on hand for Santa. Like I said in my last post, I always do roll-out sugar cookies and gingerbread cookies to decorate with the kids, but as you can see from this Christmas Cookie Round-Up, there are so many more options! I absolutely love these peanut butter kiss cookies . They are flourless, gluten … [Read more...]

Christmas Chocolate Drops with Dove® Chocolate

Christmas Chocoalte Drops | www.nutritiouseats.com

I love Holiday baking. I don't know why it's so much more fun than baking any other time of year. I suppose the excitement of the Holidays is in the air, Christmas music is playing (well maybe not quite yet), we are thinking about the time we'll spend with our loved ones. It's a magical time of year. Today I am sharing a cookie recipe, Christmas Chocolate Drops, that features DOVE® dark chocolate. The reason this recipe appealed to me is it only calls for 1/3 cup of flour and a greater quantity of chocolate and nuts. I could tell it would be chewy, chocolaty and nutty and a little … [Read more...]

Cheesy Brown Rice Gratin with Zucchini and Eggplant

BrownRiceGratin-1+

I wouldn't say rice is my favorite grain; I do love it with Asian food but it doesn't make a very regular appearance in my weekly menus. A couple years ago my kids tried the traditional cheesy broccoli rice casserole during the Holidays and loved it. When I saw this dish, Cheesy Brown Rice Gratin with Zucchini and Eggplant, in Cooking Light I thought it looked like a tasty, healthier variation. It calls for brown rice instead of white, no processed cheese sauce, just a little good quality parmesan cheese for flavor and 2 pounds of eggplant and zucchini. When I first saw the bread … [Read more...]

Flourless Peanut Butter Kiss Cookies ( Gluten-Free, Dairy-Free)

Peanut Butter Kiss Cookies-1-6

Congratulations to Katie C. the winner of the Uncommon Goods Giveaway! I know you will enjoy the gifts as much as I did! Hi friends. It has been way too long. I am back from vacation in San Diego and totally behind schedule. I planned on blogging while I was there but I took my lap top which I don't usually blog from and it was so slow that I couldn't handle wasting precious vacation time trying to post. I didn't take many real photos but if you are on instagram you can see a few of the ones I did take while in San Diego (click on the IG button up top). We hit up Disneyland, California … [Read more...]

Uncommon Goods: Christmas Gift Ideas & a GIVEAWAY!

Uncommon Goods

Who is in the midst of Christmas shopping? I am always on the hunt for unique gift items especially during the holidays and love sharing a few of my favorite things with you every year. Since I always have at least one of the three kids with me it makes shopping in person very difficult. Thankfully I have a nice cozy office to do my online shopping. When the folks at Uncommon Goods (a Brooklyn-based online retailer of unique gifts and creative designs) offered to send me a couple products from their kitchen/cooking section I immediately fell in love. It was my first time visiting their … [Read more...]

Crostini with Whipped Feta and Tomatoes

Crostini with Whipped Feta and Tomatoes | www.nutriitouseats.com

This is hands down one of my favorite appetizers ever. I made it for the first time a while back when my mom was in town and we ate it several nights for dinner. Wine and crostini. What more do you need? By the way, have you ever wondered the difference between crostini and bruschetta? I had to look it up but it's really just a difference of the bread used. Bruschetta, form the Italian word "bruscare" is to roast over coals and is made from Italian or sourdough bread. Crostini are toasted from a finer-textured bread like a baguette. They are both topped with a variety of delicious toppings … [Read more...]

A Holiday Treat for Santa: Blondies

blondies-1-2

Santa works hard all year to make Christmas day magical for kids all over the world. He needs something caloric and high fat to sustain him through the night, don't you think? Enter some ooey, gooey, fabulous blondies. This was my first time making blondies and I was shocked with how good they were. I just assumed Blondies tasted as boring as they looked. With toasted nuts, white and dark chocolate, there was no chance of that happening. If you're rummaging around your cupboards looking for ingredients to make a treat for Santa- try these. You'll likely have everything you need on hand! … [Read more...]

Easy Holiday Appetizer: Homemade Onion Dip

OnionDip-1

Some of my favorite foods to have around the house during the Holidays are Ruffles and onion dip- in the past it was store-bought onion dip or even just plain light sour cream. It's weird, but for some reason I associate it with this time of year. It's not exactly what I'd serve guests but I love pulling out the leftover ham and making a sandwich along with my chips & dip. When I saw this recipe posted on someones pinterest account I knew I'd love it. Just in time for the Holidays this super easy dip is definitely guest-worthy...a big step up from the sour cream mixed with Lipton soup … [Read more...]
