Falafel Veggie Burger with Feta Yogurt Sauce

FalafelVeggieBurgers-1-6

I really enjoy a good veggie burger and love that there is such a variety on how to prepare them- some are made with rice, some with lentils, some full of vegetables. One thing they have in common though- no meat! This version is a little different than your typical veggie burger- it's got a Mediterranean flair, almost like a big falafel veggie burger. I have wanted to to make a falafel burger for some time now, ever since I went to this burger restaurant in downtown Olympia that has one on the menu. For this recipe I got a head start by making the mixture the day before I baked them simply … [Read more...]

Fettuccine with Seared Tomatoes, Spinach and Goat Cheese

Fettuccine with Tomato, Spinach & Goat Cheese-1

I am a magazine junkie- I subscribe to at least 5 food magazines and love them all! However, the one I have subscribed to the longest, and is still my favorite, is Cooking Light. I can't tell you how many their recipes I have tried- an insane amount and they are all fabulous. Last week for Lenten Friday I decided to do a couple vegetarian pasta dishes and this dish inspired from Cooking Light was delicious and so simple- Fettuccine with Seared Tomatoes, Spinach and Goat Cheese (the original recipe used Burrata). I love a good, easy pasta recipe and since I have been running a lot more … [Read more...]

Chipotle Roasted Sweet Potato and Cabbage Salad

Chipotle Roasted Sweet Potato & Cabbage Salad-1

I am so happy to be sharing this delicious Chipotle Roasted Sweet Potato and Cabbage Salad recipe today. I had envisioned making this all weekend and really meant to get a post up on Sunday but it was just one of those days that I literally ran out of time. We got home from mass around 11:30am, the weather was gorgeous- a warm 50 degrees with blue skies and the kids thought it was so warm that they decided to play with the water hose in their swim suits! No joke. My Texas born children now think 50 degrees is swim suit weather. I baked some breakfast cookies that I had hoped to post but … [Read more...]

Tomato Kale Soup and Meal Planning

TomatoKaleSoup-2

What do you get when you have a big bag of kale to be used, a husband with a cold and a Dietitian wife trying to make him better? Homemade tomato kale soup! I have been trying hard to work on my own recipes- as in no adaptations, no inspiration or guidance from cookbooks or the internet and ya know what? It's not easy! Sometimes the recipes-in-progress take several tweaks or repeats until I get them right which makes blogging tough. It can be expensive and a long evolution so to all those food bloggers that post all (or mostly) original recipes, kudos to you! This soup however, I dreamed up … [Read more...]

Spinach-Stuffed Portobello Mushrooms & Meal Planning

Spinach-Stuffed Portobello Mushrooms

How was everyone's weekend? Two of the kids caught a cold last week and passed it along to me. Luckily I caught a mild case of it and with a good nights' sleep Friday was still able to run 8 miles with my running group. The only problem was that running for over an hour in the cold didn't exactly make me better. Sore throat, congestion and fatigue set in...probably not a good move. I'm going to crawl back in bed as soon as I can. Aside from being a little sick I did manage to get out of the house a few times. My husband takes the kids fishing quite a bit so I joined along on Saturday and got … [Read more...]

Nutrition in Eggs & Recipe for Poached Eggs in Tomato Sauce

Poached Eggs in Tomato Sauce-1-5

I am always on the look out for new ways to eat my eggs. This might look like a strange combo but it was delicious! I love eggs and yes there is some controversy about their health benefits. Depending on the source and your personal reaction to them, they might not be best for you. For me, they are one of my favorite breakfasts and even great for dinner (egg tacos, quiche, frittatas). Unfortunately we just found out my 14 month old baby boy is allergic to them so I have to be a bit more careful about what I prepare using eggs, but I am sure he will grow out of it as many children at that age … [Read more...]

Tofu Lettuce Wraps with Peanut Sauce & Meal Planning

Tofu Lettuce Wraps

A couple days after I posted my last post  about the weight loss challenge I am hosting, DietBet was featured on the Today show! What great timing! If you need to lose some weight, don't forget to join! The game starts in 8 days so if you need that extra push and motivation to start losing weight, don't hesitate! It will be fun! I just started cooking with tofu last year when I experimented eating vegan, otherwise it was never something I'd consider buying. Why would you buy and cook tofu when there are so many other flavorful foods I thought?!  Although I still could live without it … [Read more...]

Kale Salad with Lemon Dressing

Kale Salad-1-5

I could live off salads. I am not kidding. I just love the variety you have when creating one- from the greens you use, to the add-ins and dressing. There is no reason to be eating boring ol' tossed salads all the time. Let's get creative! First off, kale isn't my typical green for a salad but I think I will start using it more this way. It is packed with beta-carotene and has both antioxidant and anti-inflammatory benefits. It falls into the cruciferous vegetable family so has the same cancer preventive benefits. It is much heartier and more bitter than your typical salad greens but I just … [Read more...]

Crostini with Whipped Feta and Tomatoes

Crostini with Whipped Feta and Tomatoes | www.nutriitouseats.com

This is hands down one of my favorite appetizers ever. I made it for the first time a while back when my mom was in town and we ate it several nights for dinner. Wine and crostini. What more do you need? By the way, have you ever wondered the difference between crostini and bruschetta? I had to look it up but it's really just a difference of the bread used. Bruschetta, form the Italian word "bruscare" is to roast over coals and is made from Italian or sourdough bread. Crostini are toasted from a finer-textured bread like a baguette. They are both topped with a variety of delicious toppings … [Read more...]
