Getting Caught Up and Sharing Some Link Love

Thanksgiving-1

Congratulations to Gretchen H. the winner of the Lululemon & Magazine Subscription to Vegetarian Times (her choice). Thank you so much to all who entered! Hello friends! I've missed you! How was everyone's Thanksgiving? I didn't intend to take off this long but I was a little under the weather on Sunday/Monday. I am all better though. My family left yesterday and although it's always sad to see them go especially since they live so far away, it will be good to get back on track and ready for our next adventure- our trip to San Diego! We had a lovely visit though- a delicious … [Read more...]

On Being Alone and Meal Planning

IMG_2904

I am a slightly paranoid person. I know it and I am learning to deal with it. I usually don't like to make it known publicly when my husband is out of town. Most people share lots of personal data on their blogs but I try not to. It's not that I don't trust you dear readers. I just don't trust the crazy people of the world....and in case you've missed the news over the last month, we've got a lot of crazy in this world we live in! Anyway what I've been keeping from you is that my husband has been out of town for 4 weeks to Alabama and Korea and was due back in another week. Typically 5 … [Read more...]

A Trip to the Farmer’s Market: Recipe for Roasted Beets & Meal Planning

Beet Salad-1

One thing I am really enjoying about this part of the country is the wonderful Farmer's Markets full of beautiful produce. I definitely missed going to them when I lived in Missouri and now I always look forward to our beautiful purchases each week. I've tried to branch out of my comfort zone when shopping at the Farmer's Markets because I can always buy spring mix and broccoli. Beets are not something that I would have put on my "like" list until recently. I always associated beets with the icky canned ones. It wasn't until ordering restaurant salads with fresh beets did I realize how … [Read more...]

A Few of My Favorite Things

FavoriteThings-1-2

If you caught up with my last post, you'd know that I am in a bit of a cooking rut. Not to worry, I am sure now that my mom is visiting, I will have lots of free time to go grocery shopping without my kids, catch up on all my favorite food magazines and blogs, and have the time to be inspired. You just wait. For now, I thought I'd share a few of my favorite things, totally unrelated to food. I always like to keep a "wish list" on hand for fun. You know in case I win the lottery. I never thought I'd get excited about rain boots, but after living in Missouri where there are plentiful rain … [Read more...]

The New Nutritious Eats and a Recipe for Chimichurri

Chimichurri-1-2

I am so excited to be blogging from my new and updated site! I know it might not look a whole lot different to you and that was the intent. There were just a few design changes and some behind the scene changes made. In case you are dying to know what I changed and can't pinpoint it, I had the green side bar widened and changed to white and had things moved around a little, I had a new navigation menu installed (up top where is says "home, about, work with me", etc) and had custom social media buttons added (see those cute round green buttons in the top right corner). I also had the spoon and … [Read more...]

Hawaiian Vacation and Blogging Gets Thrown Out the Window

Oahu,Hawaii-1-2

We just got back from our two week vacation in Hawaii. I am so thankful that our families all fell in love with Hawaii when they visited us, and now we have chosen it for our family reunion spot. We met up with my parents, my husband's mother and his three siblings and their families. Nineteen people filling a beachside vacation rental on the island of Oahu was not a bad way to spend the two weeks. The kids absolutely adored all the time with their cousins, aunts and uncles. We chose not to schedule a packed itinerary and instead enjoyed a little more beach time. Boy was it RELAXING. I … [Read more...]

February Foodie Penpal Reveal

foodiepenpal-1

Did you have a penpal when you were a kid? I remember having one in grade-school and it was always so much fun to receive a letter in the mail...even if it was from a stranger! So when I heard about a foodie penpal exchange, I thought it sounded like a fun idea. Here is the deal: you send a care package full of food goodies ($15 limit) to another person you are matched with. In exchange, a different person who signed up for that month sends you a box of goodies. I was hoping to score some food goods that I can' find in our small town here. I received a great box from a sweet girl named … [Read more...]

Vegan Month Recap

Roman3months-1

Boy was the month of January a LONG one. Whether it was because it was the first month in a LONG time that we didn't have a birthday or Holiday to celebrate...or mabye it was because I was eating vegan. Either way, it was long. So I thought I'd recap how my experience went and curious to hear from anyone that did it with me or just ate more vegetarian dishes overall. I did lose 4 pounds in the month of January (*see additional info) while I was eating vegan. This was very exciting for me because I don't lose weight very fast. I am now 6 pounds away from my pre-pregnancy weight and my little … [Read more...]

Thanksgiving Recap and Cinnamon Fig Jam

FigJam-1-2

I love the Holidays. We had a great, yet quiet, Thanksgiving this year. I cooked the whole dinner myself but spread it over 3 days so that I could actually finish. It turned out delicious so I was very pleased. I knew that making 12 dishes alone, there would be a few disasters along the way. I couldn't expect everything to be perfect! A few things I learned about my Holiday cooking experience: Growing up as a kid and even in college, you don't appreciate the fact that your mom (or Dad or whoever) just prepared a 12 dish meal for you. You think it's good. You eat it. You might say thanks, … [Read more...]

Watermelon Fizz & Meal Planning Monday!

WatermelonDrink1-1

I've never really liked the word "foodie". I am not sure why. I am, however, a so called foodie. That I know. It is simply an informal term for an aficionado of food and drink. From Wikipidia, here is the difference between the term foodie and gourmet: "the two terms are sometimes used interchangeably, foodies differ from gourmets in that gourmets are epicures of refined taste, whereas foodies are amateurs who simply love food for consumption, study, preparation, and news. Gourmets simply want to eat the best food, whereas foodies want to learn everything about food, both the best and the … [Read more...]
