Kale Salad with Red Wine Vinaigrette & Meal Planning

Is anyone tired of kale yet? I'm not! It's one of my weekly staples in my CSA box and I love it! I usually sauté it, use it in smoothies or chop it thinly and enjoy it as a salad. Occasionally I'll look for a good recipe incorporating kale just to change things up- it's such a versatile veggie. Not to mention it's a nutritional powerhouse. I'd need a whole separate post just to talk about the benefits, but here are some: full of cancer-fighting compounds, crazy high amounts of Vitamin K (careful if you're on an anticoagulant medication), Vitamin C, Vitamin A and Iron. High in … [Read more...]

Scenes From The Weekend and Meal Planning

Hi friends! Hope you all had a wonderful weekend and enjoyed celebrating the wonderful dads in your life. We had a lovely weekend, the first one since my hubby returned from Afghanistan that it was just our family. We both still have a lot of sleep to catch up on, but it was nice to have a somewhat quiet weekend at home. Over the last 2 weeks baby Evangeline cut her first tooth and rolled over for the first time so these milestones have been interfering with our sleep! I told my husband I look forward to the time where I don't always look (or feel) tired. She did give me one day where she … [Read more...]

Meal Planning: Week of April 14th

Hi friends! I am having problems with my photo editing software so I can't upload any photos until I get the issue resolved (and yes I could use other programs like iPhoto, which I might have to do in a pinch but I prefer to wait). So bear with me this week as there might not be any new recipes with photos :( I decided to go back to my usual meal planning method this week because my mom is in town and sometimes winging it, like we have been doing, causes more problems such as hungry, cranky children. It's grilling weather for sure here in the Pacific Northwest- sunny and in the 60s. … [Read more...]

Make-Ahead Salad Bowls

Hi friends. Just popping in for a quick visit to share this fabulous salad inspired by Starbucks. That's right, you heard me....a salad inspired by Starbucks! I was in there this week with about 25 minutes to spare before picking up my daughter from preschool. I had our sitter watching the other kids so I thought why not actually go into a Starbucks (rather than use the drive-thru), sit down and enjoy some time to myself. Now I am pretty frugal when it comes to buying lunch out. I have a hard time justifying spending money on food that I usually have at home, but I was curious...and … [Read more...]

Basic Family Meal Plan

Ugh meal planning. What used to be one of my favorite things to do on the blog has now become quite the chore. Having a newborn, plus 3 other little ones in the house and a husband who is missing from the table, makes it quite a challenge to cook dinner. First of all, the kids couldn't care less if they have eggs and toast or a gourmet meal so it makes it hard to put the energy into it. Plus they have different tastes than I do so they end up complaining anyway. It didn't bother me when my husband was around to eat with me, but now it doesn't make sense. It was hard when I was pregnant with … [Read more...]

What I Ate This Month & Meal Planning

WIATMRibbet collage

I had such a wonderful weekend in Seattle with my girlfriend Heather. I had no idea Seattle had such an awesome downtown- the shopping, the restaurants, the market! Fabulous! We live about 50 miles south of downtown so we haven't had a chance to visit much since we moved here almost a year ago. I am definitely going to start my list of places to try before we leave. Luckily we stayed in such a great location that we were able to walk everywhere- Pike's Market was 4 blocks away, shopping started at 2 blocks away and all restaurants were visited by foot. I loved that we didn't have to get in the … [Read more...]

Tomato Kale Soup and Meal Planning

What do you get when you have a big bag of kale to be used, a husband with a cold and a Dietitian wife trying to make him better? Homemade tomato kale soup! I have been trying hard to work on my own recipes- as in no adaptations, no inspiration or guidance from cookbooks or the internet and ya know what? It's not easy! Sometimes the recipes-in-progress take several tweaks or repeats until I get them right which makes blogging tough. It can be expensive and a long evolution so to all those food bloggers that post all (or mostly) original recipes, kudos to you! This soup however, I dreamed up … [Read more...]

Chocolate Covered Marshmallows & More Valentine’s Treats

Chocolate Covered Marshmallows-3

I totally on board with a little dessert splurge around the Holidays. I tend to gravitate towards chocolate but that's just me. I wanted to make an easy Valentine's treat for the kids and when I saw these heart shaped marshmallows I knew I needed to make something with them. I didn't have to think very long because as soon as I got home and looked at the back of the package I saw this easy recipe for chocolate covered marshmallows. Better than buying the store bought ones! I used a few different options for toppings- sprinkles, shredded coconut and candy hearts. Use your imagination … [Read more...]

Spinach-Stuffed Portobello Mushrooms & Meal Planning

Spinach-Stuffed Portobello Mushrooms

How was everyone's weekend? Two of the kids caught a cold last week and passed it along to me. Luckily I caught a mild case of it and with a good nights' sleep Friday was still able to run 8 miles with my running group. The only problem was that running for over an hour in the cold didn't exactly make me better. Sore throat, congestion and fatigue set in...probably not a good move. I'm going to crawl back in bed as soon as I can. Aside from being a little sick I did manage to get out of the house a few times. My husband takes the kids fishing quite a bit so I joined along on Saturday and got … [Read more...]

What I Ate This Month and Meal Planning

Daily Food

Hi friends! I hope you all had a restful, rejuvenating weekend. We had a lot going on at church this weekend, spent Friday making homemade deep dish pizza and Saturday night tried out a new Greek restaurant which unfortunately ended up being very average. We had a brief period of warmer temps (mid 40s with no rain) so the kids rode bikes and took lots of wagon rides. The rain is back today but luckily I have a lovely view of the beautiful evergreens to keep my spirit high even when it's gloomy out. Today in addition to meal planning, I will share a sample of my iphone food photos of things … [Read more...]
