Oh. My. Gosh. I can't believe I took the whole week off blogging, but I was so inspired and excited when I returned from the International Food Blogger Conference on Sunday that I didn't know what to do with myself first. The conference left me recharged for blogging which was great because I totally needed a pick-me-up. I started brainstorming new post ideas, recipes, looked into more conferences, set goals for hobbies I want to work on.....and I got a teeny tiny bit overwhelmed. Oops. So I did what I do best when I am overwhelmed with ideas. I procrastinated. I stared at my "to do" … [Read more...]

Oatmeal Raisin Cookie Dough Balls {Vegan, Gluten-Free}

OatmealRaisinCookieDoughBall++

Here we are in our first full week of school (last week was short due to the Holiday). The kids are both doing so well, but our schedule has officially picked up with the addition of after school activities like gymnastics, church class and soccer twice-a-week for both kids. The kids come home starving as it is, but now that we go straight to another activity I have to keep the house well stocked with healthy snacks. One of their favorites is the snack balls I make in a variety of flavors- they often have some sort of dried fruit, some form of nuts and/or oatmeal. Since I've had oatmeal … [Read more...]

Apple Pico de Gallo {#YahooFood}

Apple Pico de Gallo | www.nutritiouseats.com

    When I was in graduate school I became friends with a fellow RD intern whose parents lived in Cabo San Lucas. She invited me and another one of our classmates to go hang out there one summer. I fell in love. Not only is it gorgeous, but the local fruit stands, taco shops and markets add such character to the Mexican town.   We stayed for a full month (yes, lucky us!) because her family was kind enough to make room for us, and I have such great memories of going to the market to pick out our produce. Tomatoes, cilantro, onion, lime and peppers were the usual suspects. Coming … [Read more...]

Frozen Chocolate Banana Bites

People love to talk about the weather. It's just part of human DNA. We also like to complain about the weather. You know we all do it. I was running today with baby E in the stroller and I checked the weather channel and it said it was 85 degrees at the time. I ran and boy was it hot. Then I recalled the days I lived in Texas and ran in much hotter temps, but I am simply not used to them now. On the other hand I hate running when it's too cold. If it's under 60 degrees I want no part of it. It seems like when it's summer I am longing for the fall and when it's winter I am eager for … [Read more...]

Homemade Coconut Cream Pie Larabars

Hi friends! It's good to be back! I ended up taking 2 weeks off of blogging after my husband came home from his 9 month deployment. If you missed our homecoming pictures you can see them here. He's had a light work schedule since he got back so I couldn't get enough family time. It's funny how it took no time at all for things to go back to normal. We are just thrilled to have him home again. He arrived the Monday night, Memorial Day, then that first weekend our good friends from Texas came to visit us which was totally awesome. They have 4 kids the same ages as ours but ever since we … [Read more...]

Chocolate Chip Cookie Balls {Vegan, Gluten Free}

CookieBalls-3+

  The world of blogging really jumped on the snack ball bandwagon. I am pretty sure you'd be hard-pressed to find a food blogger without a "ball" recipe on their blog. And for good reason. They're the perfect snack. I started making balls over 6 years ago  (sorry if "making balls" sounds weird to you, but I simply can't call them anything else) when we were living in Austin and I wanted snacks to have on hand while I was nursing my firstborn. I made them very simply with peanut butter and oats and dipped them in melted chocolate. To this day they are one of my favorite … [Read more...]

Stonyfield Greek Yogurt & A Perfect Parfait

Parfait-1

The following post is sponsored by FitFluential LLC on behalf of Stonyfield. My kids have a Greek yogurt every morning for breakfast. No exaggeration. They are kind of obsessed. It's great because while I am getting my coffee they can go out to our garage fridge where we stock the bulk food and grab their yogurt and start eating. Makes my life a little easier in the morning...at least for about 5 minutes until they are done. I have been buying Stonyfield organic yogurts since the kids were babies. YoBaby was always stocked in our fridge so when I received this wonderful package from … [Read more...]

10 Favorite Gluten Free Snacks

Udis

Just because I don't follow a strict diet doesn't mean I don't like to experiment eating gluten free. There are so many more options available these days as compared to 15 years ago! Remember when I posted here about gluten free entertaining and explained there are plenty of naturally gluten free foods like fruits, vegetables, legumes and nuts, meats, seafood and dairy products that will make up a large part of your diet. Today, however, I want to talk about my favorite gluten free snack food. One of my good friends in gluten free and I always think about her when I grocery shop. Is … [Read more...]

Chocolate Chip Banana Bread

Chocolate Chip Banana Bread-6

I confess, I don't really like chocolate in my banana bread. I prefer it straight up and traditional with lots of banana flavor and walnuts. This one, my kids love. What's not to love if you're a kid? Bread, banana and chocolate? I have been baking on a regular basis so that they can have a treat in their lunchboxes. Some of their favorites are blueberry zucchini muffins, pumpkin bread and banana bread. Then they'll say, "when are you going to put cookies in our lunch? Some kids get cookies in their lunch, ya know"....and I say well they're probably the pre-packaged junky … [Read more...]

Blueberry Zucchini Muffins

BlueberryZucchini3-1

Back-to-school baking! I love having muffins on hand for quick breakfasts, snacks or to pack in lunches. My kids request these and often help me make them. I love quick breads that incorporate vegetables too. It's a good lesson to my kids that vegetables aren't evil. They tend to freak out at veggies they don't like, but since they helped me make these muffins, they sure have been talking a lot about zucchini. Now if I can get them to try it in other dishes! I have played with this recipe over the years and most recently wanted to experiment by cutting the sugar. The original recipe I … [Read more...]
