Grilled Cheese with Pesto and Tomato

Cheesey, buttery, white bread, grilled cheese. That's how I remember eating them as a kid. Not exactly a health food, and they aren't the easiest to light-up with the exception of reducing the amount of butter and cheese used and throwing in some veggies (or fruit) like this tomato! Although I love a good grilled cheese, I don't make them that often. You would think mom of 4 kids would be making grilled cheese all the time. The thought actually popped into my head the other night on one of our busy soccer days- "it's been a while since I've made grilled cheese kids" let's have that for … [Read more...]

Pumpkin Cheesecake Bars

Pumpkin Cheesecake Bars+1

Congratulations to the winner of the goodie food box Jessica F. you have been emailed! I finally busted out the pumpkin this week. I already feel like the month is off to a quick start so don't want to waste any time! Pumpkin desserts are one of my favorites this time of year- pumpkin cheesecake, pumpkin pie (of course), pumpkin swirl brownies and these pumpkin cheesecake bars. I just want to warn you that the majority of the dessert I post or will post over the Holidays are "splurge worthy" recipes. I don't do anything super crazy to lighten up desserts because I don't … [Read more...]

Raspberry Cornmeal Pancakes with Lemon Curd

Raspberry Corncakes with Lemon Curd

I am a bad food blogger. I don't follow the national food holidays at all, but I noticed someone on twitter mentioned that yesterday was National Pancake Day and I since I am still recovering from my cold and rather tired I thought I'd whip up some pancakes for dinner instead of what I had on the meal plan. You might be wondering how I managed to whip these up AND take photos while feeling under the weather? Well these aren't the actual pancakes we had last night...thank goodness for keeping a few recipes in the queue! As a result, I thought it would be a perfect time to share this … [Read more...]

Easy Kids Birthday Cake: Chocolate Cake with Chocolate Buttercream Frosting

Boy Chocolate Birthday Cake-1-2

As I mentioned last week,my oldest son turned 6 this past week and we had a low key yet wonderful birthday celebration. We have seemed to make it a tradition to go to the zoo to celebrate L's birthday in October. It is always a fun thing to do that can take place during the day of the birthday if you have the party scheduled on a different day. The thing is this year, there was no party. We did the zoo on his actual birthday and Chuck E Cheese (per request of my son) the following day when my husband could take off work. Instead of a party we just spent the evening opening … [Read more...]

Life long friends and a Recipe for Smoked Ribs

Pork Ribs-1-4

One  of my best friends of almost 30 years visited over the weekend. I've known her since elementary school, we went to high school together and lived together after college and although I haven't seen her in 5 years, it felt like it had only been months. Whenever my we get together it is nothing but good ol' belly laughs, smart-ass jokes and great conversations. Don't you love that about good friends? We went on a nice run, got pedicures and otherwise just caught up over good food and drinks. Once you have kids you know that it's much more enjoyable to hang out at home versus … [Read more...]

Summer Memories and Chocolate Silk Pie

If you've read my about page you'd know that although I am a big fan of healthy eating, sometimes I like to splurge on things I wouldn't necessarily label as "nutritious" and since the name of my blog is Nutritious Eats I have to preface things by saying this pie is not one of those "nutritious eats". It's a chocolate pie. It's homemade so that's a plus, but at the end of the day it's still a rich, caloric chocolate pie. I LOVED every bite I took, however this is one of those recipes that is falling into my splurge worthy category. So far this summer has been off to a slow start- … [Read more...]

Move Over Girl Scouts: Peanut Butter Sandwich Cookie

I haven't posted a splurge-worthy recipe in a LONG time so look away if you are trying to fit into a bathing suit by the summer time. Look away if you are watching what you're eating. You're going to want one of these cookies now. And you will make a batch and want to eat them all and you will hate me for it. So if you like cookies, just look away. Pretend like you never saw this. For those of you who are accepting of the splurge, these cookies were awesome. They resembled the Girl Scout Peanut Butter Sandwich cookie, only WAY, WAY, WAY better. First off, they are much bigger, the … [Read more...]

A Holiday Treat for Santa: Blondies

Santa works hard all year to make Christmas day magical for kids all over the world. He needs something caloric and high fat to sustain him through the night, don't you think? Enter some ooey, gooey, fabulous blondies. This was my first time making blondies and I was shocked with how good they were. I just assumed Blondies tasted as boring as they looked. With toasted nuts, white and dark chocolate, there was no chance of that happening. If you're rummaging around your cupboards looking for ingredients to make a treat for Santa- try these. You'll likely have everything you need on hand! … [Read more...]

Chocolate Cupcakes with Chocolate Buttercream Frosting & Heath Bar Sprinkles

When it comes time to birthdays in this family, we all seem to prefer chocolate (although carrot cake and Italian cream are my husband's other favorites). I have made this recipe several times and am always pleased with how moist and light these cupcakes turn out. If you are new to my blog, welcome! If you didn't get a chance to read my "about" page and a little bit about my philosophy on nutrition, then you're probably wondering why the Dietitian is posting a cupcake recipe. You will quickly learn that I am all about moderation. I love healthy food, am a firm believer in cooking from scratch … [Read more...]

German Chocolate Mousse & Valentine’s Cookies

german choc mousse-0722

Nothing says Valentine's Day like chocolate. I mean seriously, I'd like to meet the person who says they don't like it. For some reason, I crave chocolate even more during Valentine's day. I have trained my husband to include a box of chocolates as part of the gift exchange. Non-negotiable. I love picking through the flavors and end up throwing away a half eaten box, but there is always the excitement of knowing the whole box is for me! Since we had kids 4 years ago, we stopped going out to dinner on Valentine's day and instead cook at home after the kids go to bed. For me it's just as nice … [Read more...]
