Green Curry in a Hurry & Meal Planning Monday

My husband and I used to go to this amazing Thai restaurant in San Diego, Siamese Basil. Please go if you ever have the opportunity for you will be sure to get some of the best Thai food. Their green curry was unbeatable and that is when we really fell in love with the dish. I have never really wanted to get into Thai cooking. Easy Black Bean Burgers

"Beans, beans, they're good for your heart..." Sorry, I can't not think of that song when talking about beans. I don't eat a ton of veggie burgers, but I do really like them. Like I've said time and time again, I am always trying to make stuff from scratch to cut down on unnecessary preservatives, but this was a first for me. Pesto Parmesan Turkey Burger & Meal Planning Monday!

If you think that turkey burgers are dry and have no flavor, I am here to prove you wrong. I know I've mentioned that I steer more towards turkey/fish/chicken over beef, so I am no stranger to a turkey burger. I love adding in different ingredients and textures to make the burger more flavorful and moist. This one fit in perfectly to my meal plan last week because I knew I'd have left over pesto from my pesto pasta salad. Lemon Dill Salmon: Farm Versus Wild & Meal Planning Monday!

Hope you all had a great weekend! We've got fish on the brain over here. I was finally able to find wild salmon at one of the grocery stores in small town, Missouri. Very excited. Then onto excitement number 2, this weekend marks the first weekend the hubby caught and brought home rainbow trout! Four of them! Meal Planning Monday and Crock Pot Pinto Beans!

Hi folks. I had a busy, but fun, week in the kitchen while my parents were here. My Favorite Salad, a Greek Salad

What is it about Greek salad that I love so much? The salty olives, feta, crisp refreshing cucumbers? What ever it is, it's one of my favorites and I love that it's so easy to make at home. In fact, I like mine better than most of the ones I get at restaurants. Almost 6 years ago, my grandmother treated me, my husband, my brother and his wife to a cruise to Greece. Crock-Pot Meal: Chicken Chili

Last week in the midst of unpacking, I decided I was tired of the same ol' quick and easy dinner (i.e. bean & cheese tacos, sandwiches). Quick Fix Meal: Gnocchi with Spicy Roasted Tomato Sauce

I've been wanting to post this recipe since before Christmas and somehow it got buried in my ever growing pile of recipes. This meal is so simple yet satisfying. Gnocchi is the best when you want dinner on the table in a snap. The stuff cooks in just a few minutes- DREAM! This is a perfect example of how using a few fresh ingredients can really make a dish come alive. For example, roasting the fresh tomatoes, plus the fresh basil and parmesan cheese makes this gnocchi a real stand-out. Quick Fix Dinner: Creamy Tomato Soup

If you would've asked me if I liked tomato soup before I made this soup for the first time I would have said "no, blech, yuck". I am pretty sure the only tomato soup I had eaten back in the day was the canned version (when I was younger and as a result almost scared for life).
