The Best Vegetarian Chili

Before I talk about this recipe, I have to share some exciting news! Nutritious Eats is moving to Seattle, Washington!! We will be there in less than 3 months and will hopefully get settled into our new home right away. When it's time for a new job in the military it can often be a crapshoot- it could've been Qater, Egypt, New Jersey, Seattle. See what I mean? You never know what you're going to get! We got pretty darn lucky to move to such a great part of the U.S. I can't tell you how much positive feedback we've gotten on living there so how could we not be excited?! Ok, so back to the … [Read more...]

Mom’s Simple Chicken Tortilla Soup

I have about 4 different versions of tortilla soup that I make and this is the go-to quick version. My mom actually came up with it. This is how it evolved. When we were home visited in March she decided to make tortilla soup for dinner. She was out running errands late in the afternoon and called me and said "can you get the soup started? Just throw some onion and garlic in the pot to saute.......and if you want you can add the canned tomatoes. Oh and then just throw in the shredded chicken in the fridge and the broth. I'll be home in about 15 minutes to finish it". "Ok" I said. Well she … [Read more...]

Green Curry in a Hurry & Meal Planning Monday

My husband and I used to go to this amazing Thai restaurant in San Diego, Siamese Basil. Please go if you ever have the opportunity for you will be sure to get some of the best Thai food. Their green curry was unbeatable and that is when we really fell in love with the dish. I have never really wanted to get into Thai cooking. I kind of stay away from certain ethnic cuisine just assuming it's too complicated. Some things I just like to leave up to the restaurants. We were having a craving for curry and I thought I could at least try to use the prepared paste from the grocery store. It … [Read more...]

Easy Black Bean Burgers

"Beans, beans, they're good for your heart..." Sorry, I can't not think of that song when talking about beans. I don't eat a ton of veggie burgers, but I do really like them. Like I've said time and time again, I am always trying to make stuff from scratch to cut down on unnecessary preservatives, but this was a first for me. I found a recipe for black bean burgers in a new vegetarian cookbook I bought and thought I'd give it a try. Wow- they were surprisingly simple and very tasty. With high fiber beans, veggies and oats, you can feel very good about eating these. The best part is I had … [Read more...]

Pesto Parmesan Turkey Burger & Meal Planning Monday!

If you think that turkey burgers are dry and have no flavor, I am here to prove you wrong. I know I've mentioned that I steer more towards turkey/fish/chicken over beef, so I am no stranger to a turkey burger. I love adding in different ingredients and textures to make the burger more flavorful and moist. This one fit in perfectly to my meal plan last week because I knew I'd have left over pesto from my pesto pasta salad. The freshly grated parmesan really adds a delicious flavor and even my husband who loves a good beef burger said this was one of his favorites! From a nutritional stand … [Read more...]

Lemon Dill Salmon: Farm Versus Wild & Meal Planning Monday!

Lemon Dill Salmon

Hope you all had a great weekend! We've got fish on the brain over here. I was finally able to find wild salmon at one of the grocery stores in small town, Missouri. Very excited. Then onto excitement number 2, this weekend marks the first weekend the hubby caught and brought home rainbow trout! Four of them! Fishing is his new hobby as of a few weeks ago and since there is a beautiful huge river and creek on post, practically in our backyard, it is his new obsession. I am totally fine with it as long as he catches me some fish!  This place is a dream for a guy- woods, hunting, fishing, … [Read more...]

Meal Planning Monday and Crock Pot Pinto Beans!

Pinto Beans-1

Hi folks. I had  a busy, but fun, week in the kitchen while my parents were here. I am going to keep meal planning simple this week and utilize some of the wonderful fresh herbs we have growing in the garden. We've had a morning shower about every other day since we planted so I haven't managed to kill them yet (just one or two but that's because they got too much water and we figured out the pot didn't have a drain hole- oops). So on the menu.... Menu for the Week of June 26th Sunday Tomato, Basil, Mozzarella Salad, Antipasti Tray (Vegetables, Olives, Hummus, Grapes Leaves), Crusty … [Read more...]

My Favorite Salad, a Greek Salad

Greek Salad-2-0650

What is it about Greek salad that I love so much? The salty olives, feta, crisp refreshing cucumbers? What ever it is, it's one of my favorites and I love that it's so easy to make at home. In fact, I like mine better than most of the ones I get at restaurants. Almost 6 years ago, my grandmother treated me, my husband, my brother and his wife to a cruise to Greece. The trip was amazing, not nearly long enough, but we were certainly enticed by the Medditeranean beauty. What's funny is that it was super hard to find gyros there, but we did get some great Greek salads. They were a little … [Read more...]

Crock-Pot Meal: Chicken Chili

chicken chili-0843

Last week in the midst of unpacking, I decided I was tired of the same ol' quick and easy dinner (i.e. bean & cheese tacos, sandwiches). I had already unpacked my crockpot which I've probably only used a few times before and decided I wanted a crockpot meal. I wanted to throw stuff in the pot, walk away, continue unpacking and come back in the evening with a hot meal waiting for me. Mission accomplished. I am sure you have all experienced the feeling before. Wanting a hot meal without having to work to get it? If you know what I mean, then you might want to invest in a crockpot. I can … [Read more...]
