~2½ pounds sweet potatoes, peeled and cut into 1½ inch chunks.
1½ Tablespoons olive oil
½ heaping teaspoon dried oregano
salt and pepper to taste
Instructions
Preheat oven to 350 degrees. In a 13 x 7 baking dish, place your sweet potato chunks. Drizzle with olive oil and toss to combine. Season with salt, pepper and oregano. Bake for ~40 minutes or until fork tender, using a spatula half way to move them around.
