Molasses Cookies

spicy, soft and chewy Molasses cookies are perfect for Holiday baking- they go great with a cup of hot tea or coffee.
Ingredients
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ¾ cup (1½ sticks) unsalted butter, softened
  • ¾ cup sugar
  • ⅓ cup dark molasses
  • 2 large eggs
Instructions
  1. Preheat oven to 350 degrees. Combine the flour, ginger, cinnamon, cloves, salt and baking soda in a mixing bowl.
  2. Cream the butter, sugar and molasses together in a large mixing bowl with an electric mixer on medium seeped until smooth. Add the eggs and beat until smooth. Stir in the flour mixture until just combined.
  3. Place the bowl in the refrigerator for 10 minutes or up to 6 to allow dough to firm up. Scoop batter by heaping tablespoonfuls and gentry roll into a ball, roll ball in a bowl of nonpareils and place onto parchment lined baking sheets, leaving a few inches between each cookie. Bake cookies until the edges are firm but tops are still soft, 10-12 minutes. Let them stand on baking sheet for 5 minutes
