Peanut Butter Chocolate Chip Cookies

Ingredients
  • ½ cup roasted peanuts (I used unsalted)
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup (1½ sticks) unsalted butter, melted and cooled
  • 1 cup firmly packed dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup natural chunky peanut butter
  • 1 bag (2 cups) 60% cacao bittersweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Line baking sheets with silpat or parchment paper.
  2. Place nuts in a food processor and pulse until chopped. Combine the flour, baking soda, baking powder, salt in a medium bowl.
  3. In a large mixing bowl, cream the cooled melted butter with the brown and white sugar until smooth. Add the eggs, vanilla and peanut butter and beat until smooth.
  4. Stir in the flour mixture until combined. Add the chopped peanuts and chocolate chips and stir well. Place the bowl in the refrigerator for 15 minutes (or longer) to firm up a little.
  5. Scoop out a heaping tablespoon and gently roll in ball. Place on the baking sheets, a few inches apart. Using the back of a fork, press down gently on each cookie twice, in opposite directions to make a criss-cross pattern. Bake for 13-14 minutes or until lightly browned.
Notes
I always err on the side of caution and underbake cookies because they always firm up a bit after they are out of the oven cooling. If not eating fresh out of the oven, just microwave cookies for 10 seconds a piece for yummy melted chocolate chips.
