Top these amazing Alexia Truffle Fries with Mediterranean flavors for a complete side dish.
Ingredients
  • 1 bag Alexia brand frozen Truffle fries
  • 2 medium zucchini, julienned
  • ¼ teaspoon dried oregano
  • ½ large red onion, sliced vertically
  • 1 garlic clove, minced
  • ¾ cup cherry tomatoes, sliced lengthwise
  • ¼ cup chopped kalamata olives, without seeds
  • 2 ounces crumbled feta cheese
  • 1 tablespoon fresh chopped parsley
  • 1 tablespoon fresh chopped mint (optional)
  • Tzatzkiki sauce (recipe to follow):
  • ½ cup finely diced English cucumber, skin on (~1/4 of a large one), let sit in a paper towel overnight to drain if possible
  • 1 cup Greek yogurt (2% or full fat recommended)
  • 2 teaspoons minced garlic (~1 large clove)
  • ½ tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1½ tablespoon freeze dried dill
Instructions
  1. To make tzatziki sauce: In a bowl combine yogurt, garlic, lemon juice, oil and salt. Stir to combine. Stir in diced cucumber.
  2. Cook fries according to package instructions. Meanwhile prep topping.
  3. To julienne zucchini, cut off stem and the end of zucchini. Slice into 3 or 4 planks. Cut off the very end at a diagonal, the continue cutting into slices like fries (in a diagonal cut). Set aside.
  4. Heat a large skillet on medium high heat. Add 1½ tablespoons of olive oil. Add zucchini, ¼ teaspoon dried oregano and sauté for 3 to 4 minutes, add sliced red onion and garlic and cook for an additional 2 minutes (you want veggies to be crisp-tender, not overly cooked through). Season with a pinch of salt and pepper. Transfer to a bowl and set aside while fries continue to cook.
  5. When fries are done, transfer them to a platter or serving tray. Top fries the zucchini mixture, tomatoes, feta, olives and fresh herbs. Serve with tzatziki sauce or spoon it over the top.
Notes
Tzatziki sauce can be made 1-2 days in advance.
