Corn and Tomato Salad

- 2 cup corn, fresh or frozen (thawed)
- 1 cup diced tomatoes
- ½ cup chopped sweet mini peppers
- 1 small shallot, minced (~3 Tablespoons)
- ½ cup chopped cilantro
- 2 Tablespoons olive oil
- 2 Tablespoons lime juice
- 1 garlic clove, minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Combine corn through cilantro in a medium sized bowl. Stir and set aside.
- To make dressing, combine oil, lime juice, garlic, salt and pepper in a small bowl. Whisk well and pour over corn salad. Toss well to combine.
