Corn and Tomato Salad

Ingredients
  • 2 cup corn, fresh or frozen (thawed)
  • 1 cup diced tomatoes
  • ½ cup chopped sweet mini peppers
  • 1 small shallot, minced (~3 Tablespoons)
  • ½ cup chopped cilantro
  • 2 Tablespoons olive oil
  • 2 Tablespoons lime juice
  • 1 garlic clove, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
Instructions
  1. Combine corn through cilantro in a medium sized bowl. Stir and set aside.
  2. To make dressing, combine oil, lime juice, garlic, salt and pepper in a small bowl. Whisk well and pour over corn salad. Toss well to combine.
