Parmesan-Caper Potato Bites

PotatoBites1-1

The Holiday season is quickly approaching and we'll all be searching for the perfect appetizers and holiday dishes to make. I love potatoes and think they are just he perfect addition to any meal- roasted whole or cut with rosemary and garlic, but my new favorite are these adorable potato bites. Yes, I just called these adorable. I found this recipe in a Cooking Light magazine, but didn't add the small amount of lemon juice that was in the original recipe therefore had to change the name (they called them Lemon-Caper Parmesan Salad Bites). I don't think the lemon would've added much … [Read more...]

Oh. My. Gosh. I can't believe I took the whole week off blogging, but I was so inspired and excited when I returned from the International Food Blogger Conference on Sunday that I didn't know what to do with myself first. The conference left me recharged for blogging which was great because I totally needed a pick-me-up. I started brainstorming new post ideas, recipes, looked into more conferences, set goals for hobbies I want to work on.....and I got a teeny tiny bit overwhelmed. Oops. So I did what I do best when I am overwhelmed with ideas. I procrastinated. I stared at my "to do" … [Read more...]

Polenta Bruschetta and Meal Planning

Polenta Bruschetta | www.nutritiouseats.com

I hope you all had a great weekend! I know after my last post you are all waiting in suspense to find out the results of my foot's xray and I am happy to say that I do not have a fracture and am half way through my rest period!  It was actually a good weekend to skip the long group run as it was chilly, rainy and the kids had early soccer games. I am so curious if I will feel ready to run at the end of this week. I guess we will see!? So the recipe for today- polenta bruschetta. I'll have to admit I am pretty indifferent about polenta. I have had it before where I loved it, but more times … [Read more...]

Prosciutto Wrapped Asparagus & Meal Planning

Prosciutto Wrapped Asparagus

I have mentioned before that I love serving vegetables for appetizers. They fill you up on less calories plus it's just nice to get extra veggies into the meal. These are a little more sinful than regular roasted veggies because of the addition of the salty crispy prosciutto. They've got the red and green going on which makes them perfect for a Christmas party. I love that they are so simple to make and require very few ingredients which is something I look for when planning an appetizer spread. Some prosciutto can be extremely salty so make sure to compare the packages at the store (there … [Read more...]

Crostini with Whipped Feta and Tomatoes

Crostini with Whipped Feta and Tomatoes | www.nutriitouseats.com

This is hands down one of my favorite appetizers ever. I made it for the first time a while back when my mom was in town and we ate it several nights for dinner. Wine and crostini. What more do you need? By the way, have you ever wondered the difference between crostini and bruschetta? I had to look it up but it's really just a difference of the bread used. Bruschetta, form the Italian word "bruscare" is to roast over coals and is made from Italian or sourdough bread. Crostini are toasted from a finer-textured bread like a baguette. They are both topped with a variety of delicious toppings … [Read more...]

Roasted Vegetables and Cheese Tray Appetizer & Meal Planning

Roasted Vegetable & Cheese Tray

Ahh, Halloween is over and two of my children's birthdays have come and gone and now I can focus on family visiting for Thanksgiving and our trip to San Diego! Plus I can hopefully crank out lots of recipes between now and Christmas- such a busy time of year! In the military typically when you move to a new assignment you are assigned a sponsor, someone who assists you in becoming familiar with your new post and all the in-processing you have to do. For whatever reasons, we have never had one take care of us but we were so excited to be able to sponsor another family who recently moved here … [Read more...]

Lightened-Up Turkey Meatballs

TurkMeatballs-3

I am back on a kick to get my kids to eat more veggies. Boy they can be soooo picky! Today I share a healthier meatball with you. How is a meatball related to veggies you ask? Well you add the veggies into the meat, duh! I love meatballs, I really do. I make them several different ways and usually use lean turkey to lighten them up. Some of the recipes I make are a little richer with parmesan cheese, but this most recent version really caught my eye because it had the addition of lots of mushrooms and onions. I thought maybe it would get my kids to like mushrooms a little more. Ok so … [Read more...]

Cheese Glorious Cheese & Meal Planning

CheeseTray-3-2

Forgive me again for a few quiet weeks of blogging. We just got back from vacation and now our move to Seattle is quickly approaching (about 5 weeks away). I am motivated to get these closets cleaned out ahead of time so that I am not scrambling at the last minute. I also have to find our new neighborhood, a rental house and schools for my kiddos. Yikes! Cooking and picking up the camera amidst all of this is a bit overwhelming, but my family still has to eat so I will do my best to continue posting. I have a feeling they will be pretty simple meals from here on out. Today I don't have a … [Read more...]
