Spaghetti Squash Au Gratin

Spaghetti Squash Au Gratin-4

Who doesn't love that cheesy creamy hash brown casserole that usually makes an appearance around the holidays?  If you are trying to avoid potatoes, this is a great substitute...Spaghetti Squash Au Gratin. It's lower in fat, calories and carbs. What more could you ask for? Oh and it tastes good too! I used plain Greek yogurt in place of the sour cream which adds about triple the amount of protein and subbed spaghetti squash for the hash browns. There is a recipe similar floating around Pinterest, but the one I saw used sour cream and hardly any cheese. If calories weren't a concern I'd … [Read more...]

Fitness Goals and Meal Planning….The End of a Great Year!

Merry Christmas

I hope you all had a WONDERFUL few weeks celebrating the Holidays and hopefully you all had a little time like me to take a break from the computer and spend some quality time with family and friends. We stayed in Washington and since we don't have any family nearby it was a very quiet Christmas (well not exactly quiet as 3 kids are the complete opposite of quiet) but really a great one. Here is my belated Christmas card to all of … [Read more...]

Uncommon Goods: Christmas Gift Ideas & a GIVEAWAY!

Uncommon Goods

Who is in the midst of Christmas shopping? I am always on the hunt for unique gift items especially during the holidays and love sharing a few of my favorite things with you every year. When the folks at Uncommon Goods (a Brooklyn-based online retailer of unique gifts and creative designs) offered to send me a couple products from their kitchen/cooking section I immediately fell in love. It was my first time visiting their … [Read more...]

Prosciutto Wrapped Asparagus & Meal Planning

Prosciutto Wrapped Asparagus

I have mentioned before that I love serving vegetables for appetizers. They fill you up on less calories plus it's just nice to get extra veggies into the meal. These are a little more sinful than regular roasted veggies because of the addition of the salty crispy prosciutto. They've got the red and green going on which makes them perfect for a Christmas party. I love that they are so simple to make and require very few ingredients which is something I look for when planning an appetizer spread. Some prosciutto can be extremely salty so make sure to compare the packages at the store (there … [Read more...]

A Holiday Treat for Santa: Blondies

blondies-1-2

Santa works hard all year to make Christmas day magical for kids all over the world. He needs something caloric and high fat to sustain him through the night, don't you think? Enter some ooey, gooey, fabulous blondies. This was my first time making blondies and I was shocked with how good they were. I just assumed Blondies tasted as boring as they looked. With toasted nuts, white and dark chocolate, there was no chance of that happening. If you're rummaging around your cupboards looking for ingredients to make a treat for Santa- try these. You'll likely have everything you need on hand! … [Read more...]
