Thanksgiving Leftover Potato Pancakes

Thanksgiving Leftover Potato Patties-1+

Hi friends! Just stopping by quickly to wish you all a Happy Thanksgiving! I hope you have a relaxing long weekend (hopefully most of you don't have to work) and eat lots of yummy food. I also wanted to share a recipe that you can use with your leftovers on Friday. Great for breakfast, lunch or dinner- Thanksgiving Leftover Potato Pancakes! I was lucky to have my mom visit from Texas last week for a quick visit. I wasn't sure if the kids and I would have plans for Thanksgiving (turns out we do), but she offered to help me cook Thanksgiving dinner. We figured if we stuck to the basics it … [Read more...]

Pumpkin Cheesecake Bars

Pumpkin Cheesecake Bars+1

Congratulations to the winner of the goodie food box Jessica F. you have been emailed! I finally busted out the pumpkin this week. I already feel like the month is off to a quick start so don't want to waste any time! Pumpkin desserts are one of my favorites this time of year- pumpkin cheesecake, pumpkin pie (of course), pumpkin swirl brownies and these pumpkin cheesecake bars. I just want to warn you that the majority of the dessert I post or will post over the Holidays are "splurge worthy" recipes. I don't do anything super crazy to lighten up desserts because I don't … [Read more...]

Spaghetti Squash Au Gratin

Spaghetti Squash Au Gratin-4

Who doesn't love that cheesy creamy hash brown casserole that usually makes an appearance around the holidays?  If you are trying to avoid potatoes, this is a great substitute...Spaghetti Squash Au Gratin. It's lower in fat, calories and carbs. What more could you ask for? Oh and it tastes good too! I used plain Greek yogurt in place of the sour cream which adds about triple the amount of protein and subbed spaghetti squash for the hash browns. There is a recipe similar floating around Pinterest, but the one I saw used sour cream and hardly any cheese. If calories weren't a concern I'd … [Read more...]

Butternut Squash Stuffing

Butternut Squash Stuffing-1

Yesterday I kicked my kids out of the house (with their Dad of course) so that I could watch Thanksgiving Live on the Food Network. I absolutely loved it last year and learned some great tips! It totally got me in the mood to cook and now I can't wait to eat Thanksgiving dinner! I'am making all the traditional dishes: a delicious brined turkey, stuffing, creamy mashed potatoes, roasted brussels, a green bean dish and my favorite cranberry sauce (see below). I am also making a pumpkin cheesecake, my favorite bourbon pecan pie and probably a regular pumpkin pie. I CAN NOT WAIT! I know … [Read more...]

How to Simplify Thanksgiving

I was a bit unrealistic this year in my attempt to plan a grand Thanksgiving for my family and a couple friends. Then it dawned on me....who am I kidding? My newborn son will be 3 weeks on Thanksgiving and I am already getting overwhelmed at the thought of all the dishes that need to be prepared. However, I won't settle for less than a complete Thanksgiving meal. After giving it some thought,I decided that this was a perfect time to accept a little help from the store and modify when I can. I am a big fan of home-made, from scratch food, but something's gotta give. Here is what I came up … [Read more...]

Cranberry-Apple Sauce

It is with joy and regret that I inform you of my Thanksgiving plans. I will not be cooking this year (yeah for me!) so unfortunately won't have tons of Thanksgiving recipes to share (boo!). My hubby traveled to Korea so much this past year and racked up a lot of Marriott points while he was at it; therefore we are checking into one of their resorts here in Oahu to spend our Thanksgiving. Since none of our family lives here, cooking for four sound like a drag. I am so excited about relaxing and letting someone else feed me for a change. So when I was talking to my brother this week, he … [Read more...]
