Egg In A Spinach Nest

Ingredients
  • Per Egg Patty:
  • ¼ teaspoon ghee
  • 2 cup fresh baby spinach
  • 1 egg
  • salt and pepper
  • Sriracha
Instructions
  1. Heat a small skillet over medium heat, add ghee or other oil. Add 2 cups of baby spinach to the pan, leaving the center open for the egg. Crack an egg in the middle of the spinach. Using tongs gently move spinach around as it cooks, gently pushing it toward the egg as it cooks. Season with salt and pepper. After 1½ to 2 minutes use a spatula to flip over the egg and spinach, the spinach should be stuck around the edges of the egg. Cook egg for another 1½ to 2 minutes depending on how you like your yolk. Season with any additional salt or pepper if needed. Remove to plate. Wipe skillet clean and repeat if desired. Top egg patties with Sriracha sauce.
