Pumpkin Chocolate Chip Bars

these one-bowl pumpkin oat bars are the perfect fall breakfast or snack- super easy and ready to bake in no time!
Ingredients
  • 2½ cups gluten-free rolled oats (can sub regular rolled oats if not needing gluten free)
  • 1 cup pumpkin puree
  • 2 eggs
  • ½ cup neutral flavored oil (organic canola, avocado, grapeseed, etc.)
  • ¼ cup honey
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • ½ cup bittersweet chocolate chips
Instructions
  1. Preheat the oven to 350 degrees. Spray a 8x8 glass pan with cooking spray. Mix oats through salt in a large bowl together and stir until well combined. Stir in chocolate chips. Pour mixture into prepared pan and using a rubber or wooden spatula, smooth the top out evenly. Bake for 28-30 minutes or until edges are lightly browned. Let sit in pan for about 15-20 minutes. Cut into squares and enjoy with a cup of coffee or hot tea.
