Seven Layer Hummus Dip
- smaller container plain hummus
- ½ english cucumber, chopped
- 2 medium tomatoes, chopped
- ½ cup feta cheese, crumbled
- ¼ cup kalamata olives, pitted and chopped
- ¼ cup parsley, chopped
- juice from half a lemon
- Layer hummus, cucumber, tomatoes, feta cheese, olives, parsley in a small serving dish. Squeeze 2 lemon wedges over the dip.
- Serve with rice crackers or pita chips. Yield ~ 8 servings.
I don't usually measure the ingredients- you just want a layer of each item. Use more or less depending on what size serving dish you use.
