12 ounce smoked sausage link, cut into slices (I use a venison blend)
½ small head of cabbage (I used purple), roughly chopped
½ large yellow onion, rough chop
1 red bell pepper, rough chop
2 tablespoons olive oil
1 tablespoon Cajun or Creole seasoning (see notes)
1 lemon, cut into wedges
Instructions
Preheat oven to 400 degrees. Toss sausage, cabbage and onion in a large bowl with 2 tablespoons olive oil and 1 tablespoon seasoning. Using 3-4 large squares of foil, divide up mixture, seal up foil packets tightly, like a package. Place packets on a cookie tray. Bake for 20 minutes. Before serving, open packets, squeeze with some lemon juice and enjoy!
Notes
The amount of sodium varies greatly amongst the different brands of Creole/Cajun seasoning. Look for lower sodium seasoning. I use a Creole seasoning that has 190mg per serving, which is still plenty.
