Japanese-Style Guacamole
 
Ingredients
  • 1 teaspoon minced fresh ginger (or 1 Tablespoon pickled ginger)
  • ¼ cup chopped green onions
  • ¼ cup chopped tomatoes
  • 2 Tablespoons chopped cilantro
  • 1 Tablespoon minced jalapeno pepper
  • 2 Tablespoons lower-sodium soy sauce
  • 1 Tablespoon sesame oil
  • 2 Tablespoons fresh lime juice
  • 2 large avocados, chopped
  • Salt and Pepper to taste
Instructions
  1. Add first 8 ingredients (ginger through lime juice) to a medium sized mixing bowl, stir to combine. Add the avocado and stir gently until well combined- make sure to leave guacamole chunky. Season to taste with salt and pepper (doesn't need much salt, if any, due to the soy sauce). Store in air-tight container and refrigerate until serving.
Notes
These measurements work best with 2 large avocados. If using small ones, use 3. I also half the recipe when it's just for my husband and myself. It might seem like a lot of liquid with the soy sauce and lime, but most of it stays at the bottom of the bowl.
