Meal Planning: Week of April 14th

Hi friends! I am having problems with my photo editing software so I can’t upload any photos until I get the issue resolved (and yes I could use other programs like iPhoto, which I might have to do in a pinch but I prefer to wait).

So bear with me this week as there might not be any new recipes with photos 🙁

I decided to go back to my usual meal planning method this week because my mom is in town and sometimes winging it, like we have been doing, causes more problems such as hungry, cranky children. It’s grilling weather for sure here in the Pacific Northwest- sunny and in the 60s. Perfection! Not sure what order we will have things but here are some things we discussed:

Monday

Grilled steak & shrimp, Loaded baked potato bites, Coleslaw. I got some Savoy cabbage from my CSA box so will make something like this Savoy, Lime and Cilantro Coleslaw:

Tuesday 

Shrimp Pad Thai, Fresh Spring Rolls

Cooking Light Shrimp Pad thai

 

Wednesday

Salmon in foil or this version of Salmon in foil , Leftovers for side dishes

Foil-Salmon-Soy

Thursday 

Chopped Italian Salad, Fruit Salad

 

Friday

Vegan Chickpea Curry (perhaps I’ll use this recipe), Basmati rice, Samosas (in the freezer that I need to use up)

Frozen Yogurt Trail Mix Bars from the Lean Green Bean

Cherry Hemp Energy Bites  from iFOODreal (I’ve actually made these several times and love them. I just don’t roll them in the hemp seeds but leave them plain. They are delicious!)

Buffalo Quinoa Bites from the NatureBox (I’d probably leave out the chicken but these would make a nice snack)

Rice Crispy Eggs– found this on Pinterest with a link back to Better Homes & Gardens but no actual photo or recipe on the site. I imagine you just make rice crispy treats according to package directions and stuff some in each half of egg and close until cereal sticks together forming an egg (would probably need to spray the inside of the egg first with cooking spray).

That’s it for today. I realized how much I missed meal planning. Can’t wait to get back to it! Have a great week!

    Some great recipe links. I can’t wait to try some! I am glad you are back at the meal planning. I plan every week! Sharing the plans helped with the creative ideas, I seem to be in a slump lately.

    Sun- salad
    Mon- fish tacos with mango salsa and cole slaw inspired by coop box ingredients
    Tues- zucchini fritters in tomato sauce with kalamatas and capers. This is new but is a recipe that utilizes a bunch of my coop box ingredients
    Wed-burrito bowls
    Thurs- snack night ( hummus veggies, crackers, meat and cheese)
    Fri-out going to Good Friday service
    Sat- leftovers
    Sun- my first time hosting a family gathering we are having Ham, brisket, twice baked potatoes, fruit, Green Beans, basil carrots, salad, deviled eggs, and gf tres leeches cake.

    hope you enjoy the froyo bites/bars. i just finished up my last batch yesterday. need to make more. i’ve been craving shrimp! gonna have to make some soon.

    Oh man, I need to experiment more with quinoa balls! Right now I just use quinoa as a rice substitute (which I totally love) or sometimes occasionally in one of my favorite turkey meatball recipes, but I know it can be so versatile!

    This week I’m enjoying your chocolate chip cookie balls and crustless quiche, so delicious!

    Hi, Melanie. Thank you so much for linking to my hemp bites and so glad you love them. Rolling in hemp seeds is more for a pretty picture effect although I like the crunch outside. Also I have to say I wish I was your neighbour because your menu for this week is totally something I would eat. I’m going to check out that coleslaw and those cereal eggs are such a great idea!!!
