Meal Planning Monday!!

My parents are here visiting so I’ll make it short and sweet. I have a few miscellaneous things to cover today, but I’ll start with our meal plan for the week. This week I didn’t pull a bunch of specific recipes since my folks are here and they both like to cook, I am leaving it somewhat open and flexible for changes. Plus I will be able to run to the grocery store everyday if I feel like it because I have live-in babysitters for the week! Woo hoo! It sure takes the stress off planning when you know you don’t have to drag two toddlers into the store with you. I basically went shopping today with a bunch of meals in mind and will just end up freezing what ever we don’t end up cooking.

Menu for June 19th

Sunday

Pork Baby Back Ribs, Grilled Lamb Chops, Oven Roasted Potatoes with Garlic Ailoi, Roasted Cauliflower, Four Fruit Pie and Homemade Brownies (father’s day request)

Monday

Sausage and Vegetable Deep Dish Pizza, Salad, Asparagus

Tuesday

Chicken Fajitas, Crock Pot Pinto Beans (leftover in freezer from last week), Grilled Corn, Chips & Guacamole

Wednesday

Something on the Grill- Fish/Shrimp, Veggie Kabobs

Thursday

Bean and Cheese Tacos, Veggie Saute’ (parents leaving that afternoon so I want something easy)

Friday

clean cupboards or eat out

Saturday

eat out


So here is the activity I’ve been wanting to do for a LONG time now. The idea came from my super crafty friend Tonya’s blog- shiny new crayons! Doesn’t everyone (with kids) have broken crayons lying around the house? I collected and saved and finally had enough to do this. Check out her post here on how to make them (and yes, I’ve had this mentally bookmarked for over 2 years). Note: they did leave a little residue on my silicone muffin pan but since I always use muffin liners, it’s no big deal.

If you want a baking activity to do with the kids that doesn’t involve food, this is perfect for you!

Also, Monday I am guest blogging over at a great site, Our Family World. I am posting about some fun snacks you can make with your kids this summer and I will also be contributing to their cooking section once a month. Go check it out- but remember my post won’t be up until Monday!

    ***TOO HOT TO GRILL IN TEXAS!!!! While that would be my go to normally, we just can’t right now! We have friends coming in town and are about to head to Family Camp next week. A whole entire week where someone cooks and cleans for me!!!!****
    Sunday: Pan friend rainbow trout (I am about to make it…with some sort of an onion and tomato saute to go with it. Need to get in the kitchen and start cooking to get inspiration) with oven roasted asparagus and fresh berries. Dessert is a gluten free carrot cake that came out REALLY great (not always the case with gf) with an orange cream cheese frosting.
    Monday: Ina Gartin’s Pesto, Pasta, and Peas with fruit. (http://www.foodnetwork.com/recipes/ina-garten/pasta-pesto-and-peas-recipe2/index.html)
    Tuesday: We are being fed at a meeting
    Wednesday: Leftovers!
    Thursday: Fish tacos and watermelon
    Friday: Cuban black beans with brown rice and mango salsa
    Saturday: Tostadas made from Friday’s leftovers

      Oh my goodness Brittany, I just made that pasta from Ina last weekend when we BBQ’d for friends! I wrote out the post last week with plans to post it this week (a modified version). Too funny!

        Ha! It is so good. I am about to go make it and will hopefully have it in time for lunch today. My meals got switched around this week. What did you modify? I usually make my own pesto, but have too much to do this week and bought it. It will still be tasty, though!

    We have a busy week so our meals will be simple-
    Monday: chef salad for mom and dad, PB& honey for kids watermelon for all- at swim meet
    Tuesday: BBQ chicken salad for M & D, sandwiches for kids, fruit- dinnertime play date with friends @ pool
    Wednesday: Rosemary Roasted Chicken w/ new potatoes and roasted asparagus
    Thursday: 4 cheese tortellini and salad
    Friday: Steak and Broccoli
    Saturday: a.m.-breakfast tacos and fruit at swim meet-p.m. party at neighbors
    Sunday: chicken fajitas

    I have a light meal week due to cooking up a storm last weekend and having family in town the first part of the week.

    Monday—Dinner at my sister’s house with all the family. I am bringing a HUGE fruit salad.
    Tuesday–Ina Garten’s pesto pasta with peas from our Sweet Britt. I am sure it will be delish especially since I did not cook it:)
    Wednesday–Left overs we have a ton from Sunday, and Garden salads with left overs on top.
    Thursday–Bean and cheese Tacos or burrito bowls
    Friday–weekly pizza night, something kid friendly, and I think I might make something geared towards adults. I am really getting sick of the lack of variety on this day but my kids LOVE our pizza and family nights (so being the good mom they win on this one).
    Saturday–Star Wars pancakes ( I did find some recipes to try) these got dropped last week, because by the time we got back from picking peaches I was too tired and we at a HUGE lunch at about 2:00. We just ate big bowls of fresh picked peaches for dinner.
    Sunday–We might have company so if so probably bugers on the grill, if no company we might adopt the Smith’s baked potato sunday.

    Hi Mel, sorry for the late response. Here ya go:
    Sunday – BBQ and beer
    Monday-Seared Tuna on greens with avacado, tomatoes, mandarin oragnge, green onions, and almonds (we do this a lot…it’s easy and ahi tuna is actually is pretty cheap)
    Tuesday-Turkey meatballs and pasta with marinara, side salad
    Wednesday-FIsh tacos (tilapia)
    Thursday-Boca burgers and sweet pototoe fries
    Friday-Salmon and mixed veggies
    Saturday-out

        Also, I love the crayon idea! Mazen received a little heart-shaped crayon like that as a Valentine from one of his classmates this year. I thought it was such a neat idea instead of candy!

    hi you! first, so glad your parents are there! My Mom is here also this week so we are going to make it easy while Kevin is out of town. we’ll probably have our green smoothies almost every morning so I’m thinking breakfast for dinner at least twice this week. Here’s the thought:
    Tonight: Pasta with vegis and spinach
    Tues: I’m out with friends and my Mom is with kids so probaly something with eggs
    Wed: quinoa and red peper dish with salad
    Thurs: Stuffed french toast (almond butter, honey, bananas & ezekiel bread) with berries on top
    Fri: Pizza night with friends
    Sat: ummmm, this is as far as I often plan b/c by Sat we are always in need to fresh produce so depending on what I find (b/c we try to stick to the organics) I go from there.

    Sunday: Yummy Paula Dean recipe, chicken with Swiss cheese and stuffing on top. Baked potato, green beans.
    Monday: Had hamburgers at my folks for my Mom’s b-day
    Tuesday: Tuna Pasta salad on a bed of greens.
    Wends: Turkey burgers with french onion soup and brown rice. Steamed green beans and asparagus.
    Thurs: Frozen Meal with salad because I am taking the kids into town after dinner to spend the night with my folks. Need something easy.
    Friday: Sandwiches with pasta salad, fruit to enjoy poolside.
    Sat: Left overs
