Corn and Tomato Salad

Ingredients
  

  • 2 cup corn fresh or frozen (thawed)
  • 1 cup diced tomatoes
  • 1/2 cup chopped sweet mini peppers
  • 1 small shallot minced (~3 Tablespoons)
  • 1/2 cup chopped cilantro
  • 2 Tablespoons olive oil
  • 2 Tablespoons lime juice
  • 1 garlic clove minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Combine corn through cilantro in a medium sized bowl. Stir and set aside.
  2. To make dressing, combine oil, lime juice, garlic, salt and pepper in a small bowl. Whisk well and pour over corn salad. Toss well to combine.
