Purple Potato Salad

Ingredients
  

  • 1 pound purple potatoes
  • 1/2 cup chopped celery
  • 1/4 cup chopped shallots
  • 2 hardboiled eggs chopped
  • 1/4 cup olive oil
  • 1 large lemon juiced
  • 1 Tablespoon vegan mayo
  • 1 teaspoon dried dill use fresh if you have it
  • 1/2 teaspoon dried parsley fresh if you have it
  • salt and pepper to taste
  • Hot sauce to taste such as Tabasco

Method
 

  1. Boil potatoes until tender, ~15 minutes.
  2. Drain and using your fingers, peel skins off potatoes. Add potatoes to a mixing bowl.
  3. Smash with a fork or potato masher until desired consistency. Add the rest of the ingredients to the bowl and stir gently to combine. Season well with salt and pepper.
