Seven Layer Hummus Dip

Ingredients
  

  • smaller container plain hummus
  • 1/2 english cucumber chopped
  • 2 medium tomatoes chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup kalamata olives pitted and chopped
  • 1/4 cup parsley chopped
  • juice from half a lemon

Method
 

  1. Layer hummus, cucumber, tomatoes, feta cheese, olives, parsley in a small serving dish. Squeeze 2 lemon wedges over the dip.
  2. Serve with rice crackers or pita chips. Yield ~ 8 servings.

Notes

I don't usually measure the ingredients- you just want a layer of each item. Use more or less depending on what size serving dish you use.
