Cinco de Mayo Recipes

Hello friends, we just returned from a quick trip to St. Louis one of the big city near us. We had a great time exploring and eating (and Costco shopping). Today I have tons of stuff to catch up on- from unpacking/organizing, to making appointments, to grocery shopping. Since I am short on time, I wanted to share a little deliciousness I’ve seen around the net- a few Cinco de Mayo recipes, most of which come from the amazing food blogging community I am so happy to be a part of. Whether or not you celebrate Cinco de Mayo, use the excuse to eat some yummy Mexican food! Check out these great-looking recipes from some great bloggers.

Frozen Lemon-Berry Margaritas from Taste of Home

Oh if I weren’t pregnant (and if it was a bit warmer around here) I’d be making these for sure. Love the addition of all the frozen fruit. I will definitely try these in the summer.

Fish Tacos from She Wears Many Hats

I really love fish tacos. Don’t these look delicious? And I love that they are pretty simple to put together. I always make the same fish taco recipe over and over and it also involves tilapia with a cilantro cream sauce. I need to branch out and try a new recipe. I like the looks of this cilantro pesto on these. A great looking taco!

Caldo de Pollo (Mexican Soup) by Real Food, Whole Health

I love, love, love Mexican soups. They are simple, healthy and delicious. With all this cold weather we’ve been having I might be making this tomorrow. It looks like a great recipe!

Enchilada Style Burrito by Pham Fatale

Or if you are looking for something a little heartier, you could try this enchilada style burrito which looks delicious. This one is actually vegetarian but you could definitely had meat too. YUM!

Tomatillo-Chipotle Salsa by Perrys’ Plate

and you can’t eat Mexican food without salsa. I really dislike store-bought salsa, with the exception of Tapatio or Cholula, I would rather not have any. I love making homemade salsa- this is next on my “to make” list since I’ve always wanted to try one with tomatillos. It sounds fantastic!
