Meal Planning Monday

Let me tell you what I’ve been up to: Halloween baking! And I am up to my ears in this stuff…..

I know, it seems early, but we are having a Halloween-themed birthday party this week for my baby boy who is turning 5 years old and I couldn’t be more excited. I have always wanted to have a Halloween party and now I have the perfect excuse! Coming up later this week and next, I’ll show a few of the treats I’ve made (if they turn out that is!). I have already had a few disasters in the kitchen but that is to be expected at 37-38 weeks pregnant and cooking. Have I ever mentioned what a mess I become in the kitchen at the end of pregnancy? Not pretty.

So today I am back to Meal Planning Monday and I am going to try and open this up to the blogging world. Hopefully other bloggers will link up so we can discover new blogs and see what everyone is cooking. All you need to do is post your meal plan on your blog. Then link up. Remember the following things about meal planning:

– we just plan for dinners since that is the most time consuming/challenging part of the day
– we’re not out to impress
– if you only plan a few days at a time that’s ok, we’d still love to see
– if you don’t have days set but just know a few recipes you want to try, that is meal planning too!
– you can link to recipes you’ll be using or have used before on your blog
– if you don’t have a blog just leave your meal plan in the comment section (like done previously)
– come back each week and do it again

Meal Planning helps you make better choices during the week and gets you organized so you don’t feel so chaotic come dinner time. Remember, we all know that sometimes dinner is a frozen pizza and if that is what you are planning, don’t be shy! Hopefully we will discover new ideas for dinner and new blogs to utilize.

Menu for the Week of October 16th

Sunday
Leftover Smoked Chicken, Ribs, Green Beans,Tossed Green Salad

Monday
Hearty Vegetable Soup, Crusty Bread

Tuesday
Birthday Special for son turning 5- what ever he wants! Note: he has narrowed it down to breakfast tacos with potato and bacon or gyros 🙂

Wednesday
Spaghetti Aglio Olio, Mixed Green Salad

Thursday
Sandwich night (tom, basil, mozz for the adults, pb or turkey for the kids)

Friday
Pizza

Saturday
Birthday party- not sure if we’ll eat there or have leftovers

    Just got in bed with my pj’s on at 7 pm! Perfect time to write out my meal plan!

    Sunday: we made eggrolls found here: http://glutenfreeday.com/?p=82 SO good! Vegan and yummy.
    Monday: Gretchen cooks…yippee!!
    Tuesday: have a meeting where dinner is provided
    Wednesday: Crock pot black beans, brown rice, guacamole
    Thursday: Good ‘ole tostadas from leftover beans
    Friday: Lucky traveling…so may go out with my parents?

    Here is our meal plan for the week. My new goal is to feed the whole family plant based meals at least three times a week, hopefully more. I am also still learning the world of gluten free as one boy is noticing a HUGE improvement in his focus over the two weeks of cutting out the gluten.
    Sunday–a recipe I made up in the crockpot. Pork loin with black bean succotash on whole wheat tortillas ( brown rice for thing 2) with a light sprinkle of cheese. My hubby was very impressed with my ceation.
    Monday– a new recipe for us and the Smiths. Black bean, zucchini, rice skillet with a green salad. This is vegetarian and vegan for those who don’t add the cheese to the top.
    Tuesday–Tacos in corn shells, with the black bean and quinoa taco “meat” and fruit
    Wednesday–Rustic tomato soup with potato and zucchini pancakes
    Thursday–Left overs
    Friday–Pizza night regular cheese for Greg and two kids, individual GF pizza for thing two, ,and vegan for me
    Saturday–GF axis vension stew (in the Crock pot) with GF pumpkin corn muffins

    Sunday- asian lettuce wraps, chicken and cilantro wontons

    Monday- marinated flank steak, acorn squash, sauteed spinach

    Tuesday- fish tacos

    Wednesday- leftover flank steak, cauliflower fritters ( trying new recipe)

    Thursday- going to try your Hearty Vegetable Soup

    Friday-??
    Saturday- hosting a dinner party- chicken parmesean, Pasta, Sauteed spinach, green salad, apple crumble a la mode
