Baked Apple Pancake {Grain Free, Gluten Free}

A delicious and simple grain-free baked pancake that will feed 8 servings, perfect for a Holiday breakfast or brunch.

Ingredients
  

  • 3/4 cup almond flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3 eggs
  • 1/2 cup + 2 tablespoons almond milk
  • 1 teaspoon vanilla extract
  • 3 medium size apples
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 3 tablespoons butter
  • 1/4 cup brown sugar

Method
 

  1. In a 12 inch oven safe skillet, add the butter. Once melted, add apples, brown sugar, cinnamon and nutmeg. Stir until cooked and majority of liquid has evaporated, about 7-8 minutes. Using a spatula, distribute apples evenly in pan. Pour batter over apples. Bake at 400 degrees for 20 minutes,

Notes

To make this dairy free, just use a dairy free butter and whipped coconut cream. Do a quick google search for making this at home- all you need is a can of full fat coconut milk, sugar and beaters.
