Homemade Pita Chips

Oh. My. Gosh. I can’t believe I took the whole week off blogging, but I was so inspired and excited when I returned from the International Food Blogger Conference on Sunday that I didn’t know what to do with myself first.

The conference left me recharged for blogging which was great because I totally needed a pick-me-up. I started brainstorming new post ideas, recipes, looked into more conferences, set goals for hobbies I want to work on…..and I got a teeny tiny bit overwhelmed. Oops. So I did what I do best when I am overwhelmed with ideas. I procrastinated. I stared at my “to do” list wishing for things to go away miraculously.

I still have to tell you about the conference and I promise I will get to that later this week. For now, I am going to tell you about these pita chips.

Pita chips, Pirate Booty, popcorn, rice crackers, tortilla chips….the choices I have to make when shopping at Costco. Seriously, my piggy family of six can go through some snacks. However, I realize when shopping I can’t buy them ALL!

Lately I stopped buying pita chips, upon realizing we just don’t need 5 different things to dip in hummus, and my priority is rice crackers. However after some time I started missing them.

Then lo and behold my mother sends me a care package with some giant pita bread from a local Middle Eastern store in Texas (because you know pita bread is hard to find here in Washington….hehe, kidding).  I had to make good use of the leftovers because she paid a pretty penny to ship them to us and they were fresh, preservative-free pita bread.

I couldn’t help think of Stacy’s Pita chips and how easy it would be to make some. So I did and guess what? They tasted just like Stacy’s pita chips. The kids and hubby were all thrilled. And now they’re gone.

The garlic infused oil is great because it gives those pita chip just a subtle taste of garlic and if you want, add dried herbs too. I ended up doing half with the herbs and half without. It’s totally up to you!

Then get out your best hummus and enjoy some snacking! And if you want to make your own, this cilantro lime hummus is a good one!

Homemade Pita Chips

Ingredients
  • 12 ounces pita bread, cut into strips and then horizontally into pieces
  • 4 tablespoons olive oil
  • 3 cloves garlic, smashed
  • kosher salt
  • ½ teaspoon dried parsley (optional)
  • ½ teaspoon dried oregano (optional)
Instructions
  1. Preheat oven to 375 degrees. Add crush garlic to oil in a small bowl. Let it sit while you cut pita bread.
  2. Place sliced pita bread on 2 cookie sheets. Brush with garlic oil on both sides of bread. Sprinkle with a pinch of salt and dried herbs if using. Bake for ~10 minutes or until crisp and lightly brown, flipping once half way through.
Notes
Since there are essentially two layer of bread to a pita, some pieces might be thick and some might end up begin thinner (just one layer of bread). I like to have a combo of thick and thin pieces just like in a bag of Stacy's pita chips. The thin ones will just cook a little faster than the double layer pieces so keep an eye on them.

    Yum, these sound easy and good. I get tired of pita chips, and just stick to pitas, but I love the idea of making them myself.

    I can’t be trusted with a bag of store bought pita chips. They are gone in no time at all! But making them at home I can control the portions. And they taste better!
