An Update and Classic Cobb Salad

Hi friends! How are you? I can’t believe it’s been over 3 weeks since we moved from Washington state and since my last post!

I thought I would pop in an tell you what I’ve been up to and fill you in on what’s to come. We left Washington 3 weeks ago and it took us 5 1/2 days to drive from Washington to San Antonio where we’ve been at my parent’s house visiting them and the rest of the family.

The drive….well it was pretty good! 4 kids and 2 adults packed, literally packed, in a minivan didn’t sound like a fun time to me, but overall I am glad we did it versus taking to separate cars. The kids got to experience a true road trip. We drove through Oregon, Idaho, Utah, Colorado, New Mexico and finally Texas!

We took two easier days of driving so that we could visit the Arches National Park in Utah and Mesa Verde National Park in Cortez, Colorado. It was definitely worth it because it gave us time to stretch our legs and see a little of the beautiful countryside.

The trip was pretty uneventful except for having to stop at the emergency room on day two to get steroids for my 3 year olds persistent (asthma-like) cough.

So what happened after we got to San Antonio? Well a lot of lounging, swimming, eating (lots of eating), visiting family, etc. I really thought I would get some blogging work done my parent’s computer had been acting up so it turned out being impossible. The funny thing, the computer just got fixed yesterday so I was finally able to get a post up! Great timing (note sarcasm).


On Monday we will finally be moving into our new home in Louisiana which I am pretty excited about. We signed the lease site unseen so I am sooooo excited to see it! I did eventually get a few photos of it so I have an idea of what it looks like, but a lot of it will be a surprise. I am ready for the next adventure and to get back to work!
