Fire-Roasted Tomato Vegetable Soup

You know those times when you have NO food in the house or at least so it seems. You just stand there staring in the pantry, opening and closing the refrigerator and freezer door waiting for something to jump out at you. And nothing really does, because you don’t have time to defrost the meat, you’ve got no quick fix meals on hand, etc.

Basically you want something to appear out of nothing. You know the feeling. You’re too tired to create something fabulous, you don’t want to order take-out, but you just want something to eat.

That is when this soup recipe comes in handy. All you need is a little fresh veg and a little frozen veg, some tomato sauce and water for the liquid part aaaaaand dinner is done. Well at least half of dinner. I usually pair this with something else small like a taco, quick salad or anything else that might be leftover.

You don’t even need vegetable or chicken broth!

I have made this a couple times recently because I have just haven’t been as organized with my meal plan as I used to be . It’s just that crazy time of year and having 4 kids has caught up with me. It’s not that it was ever easy, but baby E is just on the go now so I am constantly cleaning up after her and rescuing her from danger (she’s pulling to standing, but no signs of walking yet).

Yes, I totally look forward to when I can cook several dishes just for one main meal, but for now I look for recipes like this where I can create something out of the basics. And most importantly, it’s yummy! The freshly grated parmesan cheese makes it even better, but if you want to keep it vegan obviously leave it off.

And this is a perfect simple thing to make when you’re sick. I am fighting a cold that my lovely children passed along to me. It’s just at the beginnings stages so we’ll see how it goes. However, I am taking my IDLife vitamins and eating stuff like this veggie soup! I have not been sick since last December after baby E was born- a whole year without being sick at all! I think it’s probably the longest stretch I can remember and I definitely think eating healthy and taking my customized supplements has helped.

Hopefully this easy fire-roasted tomato vegetable soup recipe will be just thing that you make when you need to make something out of nothing.

Fire-Roasted Tomato Vegetable Soup

super simple fire-roasted tomato soup made out from the basics.

Recipe type: soup
Serves: 4-6
Ingredients
  • 1 Tablespoon olive oil
  • 2 garlic cloves, minced
  • 1½ cup diced carrot (~2 large carrots)
  • 1 cup diced onion (~1/2 medium onion)
  • 1½ cup frozen green beans (can be defrosted or frozen)
  • 1 cup frozen corn
  • 1 (14-ounce) can fire roasted tomatoes
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • pinch of black pepper
  • pinch of salt
  • 1½ c up tomato sauce
  • 2½ cup water
  • Optional topping: Freshly grated parmesan cheese
Instructions
  1. Place a large soup pot over medium heat, add oil. Add garlic, onion and carrot and sauté ~8 minutes. Add green beans, corn, fire roasted tomatoes, tomato sauce, chili powder, smoked paprika and water. Bring to a boil.
  2. Reduce heat and simmer, covered for about 10 minutes. Season with a pinch of pepper and salt (optional). Serve with freshly grated parmesan cheese if desired.

    There are too many evenings when I feel like that! And then I just end up eating awkward scraps out of the fridge and pantry, haha. Will definitely keep this soup in mind the next time I’m in that boat!
