Pesto Chicken Salad

PestoChickenSalad-2

Chicken salad is so personal- everyone makes their own favorite version. I have never loved a heavy-mayo based chicken salad until I had one at a wedding shower a long, long ago- it was made with fresh tarragon, celery and some other basic ingredients. Even though I have come around to mayo-based chicken salads (although I am still super picky about which ones I'll eat) I have been obsessed with this version lately, pesto chicken salad. It's such a nice change from your typical chicken salad and if you are using homemade pesto, it's even better. The great part about chicken salad recipes is … [Read more...]

Corn and Tomato Salad & Meal Planning

Corn and Tomato Salad | www.nutritiouseats.com

I am sort of addicted to this salad. I was trying to come up with a side dish last week when I thought we were out of all vegetables. I found a few sweet peppers, tomatoes and shallots in the drawer of my fridge and I always have frozen corn in the freezer. I think most people have had some version of this salad and often you'll see something similar in a salsa form. I haven't made a corn salad since last summer and this one is a little different because I omitted the black beans and added the sweet peppers and shallots. It's such an easy, super side that goes well with a variety of … [Read more...]

Chipotle Roasted Sweet Potato and Cabbage Salad

Chipotle Roasted Sweet Potato & Cabbage Salad-1

I am so happy to be sharing this delicious Chipotle Roasted Sweet Potato and Cabbage Salad recipe today. I had envisioned making this all weekend and really meant to get a post up on Sunday but it was just one of those days that I literally ran out of time. We got home from mass around 11:30am, the weather was gorgeous- a warm 50 degrees with blue skies and the kids thought it was so warm that they decided to play with the water hose in their swim suits! No joke. My Texas born children now think 50 degrees is swim suit weather. I baked some breakfast cookies that I had hoped to post but … [Read more...]

Kale Salad with Lemon Dressing

Kale Salad-1-5

I could live off salads. I am not kidding. I just love the variety you have when creating one- from the greens you use, to the add-ins and dressing. There is no reason to be eating boring ol' tossed salads all the time. Let's get creative! First off, kale isn't my typical green for a salad but I think I will start using it more this way. It is packed with beta-carotene and has both antioxidant and anti-inflammatory benefits. It falls into the cruciferous vegetable family so has the same cancer preventive benefits. It is much heartier and more bitter than your typical salad greens but I just … [Read more...]

Broccoli Apple Salad

Broccoli Apple Salad-1-2

Broccoli apple salad. This is a recipe my mother-in-law often makes so she shared her version with me. I was in the mood for a different way to eat my broccoli- normally it's just raw with dip, steamed or roasted then topped with lemon, but this is a nice cold salad that keeps for several days so it's perfect for lunches or snack. When we were in Hawaii this past summer for our family reunion we served it for brunch with an egg casserole and fruit salad. It's a very versatile dish. Broccoli frequently earns a spot in the "top superfoods" list- it's low in calories, high in … [Read more...]

A Trip to the Farmer’s Market: Recipe for Roasted Beets & Meal Planning

Beet Salad-1

One thing I am really enjoying about this part of the country is the wonderful Farmer's Markets full of beautiful produce. I definitely missed going to them when I lived in Missouri and now I always look forward to our beautiful purchases each week. I've tried to branch out of my comfort zone when shopping at the Farmer's Markets because I can always buy spring mix and broccoli. Beets are not something that I would have put on my "like" list until recently. I always associated beets with the icky canned ones. It wasn't until ordering restaurant salads with fresh beets did I realize how … [Read more...]

Bob’s Red Mill Buckwheat Pesto Salad: Product Review and Giveaway!

Buckwheat Groats-1

When I think of my favorite food brands there are a few that really stand out- they're ones that I recommend over and over again.  In my opinion Bob's Red Mill is one of those brands that is one of a kind. They offer one of the largest lines of organic, whole grains in the country. I am sure you've seen some of their products in the health section of your local grocer, but if you check them out online you will see they have such a huge variety of unusual, high quality items- granola, oats, grains, beans, seeds, cereals, "baking aids" and more! I have been a long time fan so was so excited to … [Read more...]

Healthy Grains: Quinoa Tabouli

Tabouli-4

I can't remember the first time I tried tabouli, but I have been eating at Middle Eastern restaurants since I was a kid. If you haven't had it, it's a typical Arabic salad made of bulgur, parsley, mint, tomatoes, often seasoned with garlic, onions and a simple dressing of olive oil, lemon juice, salt and pepper. There are slight variations of the salad: usually just varying amounts of the herbs and seasonings. Although I love it with the traditional bulgur, I don't always have it stocked in my pantry so I tried using quinoa once. It was a great substitute and you get the added benefit of … [Read more...]

Do You Eat Cruciferous Veggies?: Asian Slaw

Asian Slaw

With the exception of today which is rainy, we've had gorgeous weather over the past couple weeks. The clear blue skies have me totally craving grilled food and vegetables. Love spring! Clean the cupboards continues. I went through all my spices and seasonings, herbs, etc. and in efforts to try and use up some ingredients in my kitchen before we move, made this tasty slaw. It is the perfect easy side for the spring/summer and would compliment grilled chicken, steak, shrimp or tofu! I could definitely eat a big bowl of this- slice in some avocado and you've got a meal. I do not like … [Read more...]

Strawberry-Feta Salad & Meal Planning Monday

Green Salad-1

Well I happy to say that the party we threw last night for my husband's work group was a big success. The brisket ended up being one of the best we've ever eaten. I am talking better than Rudy's or any BBQ restaurant for that matter (for those of you Texans that know it). We talked about it all night and we think the cut of the meat was just exceptionally good, but even though it was only my hubby's second time smoking a brisket, he has it down. We had 24 pounds of brisket slow cooking all day and I made my pinto beans, coleslaw, some appetizers, 4 pies and stuffed chocolate chip cookies. A … [Read more...]
