Marinated Three Bean Salad

ThreeBeanSalad7

Hello friends! Quick visit today as I take a break from Spring Break activities- the elementary schools here in Washington (state) have their break so late here, but the weather is truly spring-like so I am happy! Here is the scenario, it's Saturday afternoon and someone invites you to a BBQ dinner for the following evening. You are not able to get the grocery store but you really want to contribute a dish. What do you bring? Well if you have a well stocked pantry and freezer this is the perfect answer! I wasn't sure if it would be a hit, but this three bean salad turned out very tasty … [Read more...]

Purple Potato Salad

PurplePotatoSalad-1-2+

It looks like delivery subscription services are my thing- I've always loved getting fun mail. So in addition to Stitch Fix, my new obsession is getting my weekly CSA box. It's so fun seeing all these beautiful organic veggies (and some fruit) at my door each week. I also love the challenge of finding out ways to use them. The neat thing is that they send you an email of what is being delivered and they give you enough time to go into the system to make changes. I don't see the need for ever doing that since I like all veggies and really love the variety so far, but it's nice knowing … [Read more...]

Make-Ahead Salad Bowls

Hi friends. Just popping in for a quick visit to share this fabulous salad inspired by Starbucks. That's right, you heard me....a salad inspired by Starbucks! I was in there this week with about 25 minutes to spare before picking up my daughter from preschool. I had our sitter watching the other kids so I thought why not actually go into a Starbucks (rather than use the drive-thru), sit down and enjoy some time to myself. Now I am pretty frugal when it comes to buying lunch out. I have a hard time justifying spending money on food that I usually have at home, but I was curious...and … [Read more...]

Cherry, Goat Cheese & Candied Walnut Salad + Cherry Balsamic Vinaigrette + A Giveaway!

CherrySalad-2

Disclosure: I was asked to participate in the National Cherry Month #GoTart Campaign as a member of the Healthy Aperture Blogger Network. I received free samples of tart cherries mentioned in this post from the Cherry Marketing Institute. I was compensated for my time. Opinions expressed are my own Fancy salads are one of my favorite foods. Every time I go to a restaurant I absolutely HAVE to order one as an appetizer. The ones with goat cheese, dried fruits and nuts are the first ones that I am drawn to. Every time. So when I got the chance to create a recipe for Healthy Aperture and … [Read more...]

Veggie Burger Salad & Tips For Eating More Vegetables

VeggieBurgerSalad-2

Hi friends. Happy Hump Day! It's a going to be a fabulous rest of the week because my mother in law is coming in for a visit. It will be great to have her company and some help with the children. Plus she likes to cook so it will be awesome to have help in the kitchen too! Sunday night meal planning had burgers on the menu so I decided to go with a veggie burger salad. It's been awhile since I've made this and I forgot how satisfying and good it is! Some veggie burgers can be full of junk so make sure to read those labels and chose ones with ingredients you know, that are real and … [Read more...]

Slow Cooker Turkey Taco Meat {and a Taco Salad}

CrockPotTacoMeat-2

I have never been a big slow cooker user, but over the last year have realized just how handy they can be. Now that our schedule has us away from home 4 evenings of the week, I am on a mission to collect good crock pot recipes because I will have to start prepping dinner in the morning if we want to eat at a normal hour. I stocked up on my proteins at Costco but soon realized I have only tried chicken of vegetable dishes in the slow cooker. I wanted to have taco salads the other night so I thought it would be a good experiment to try simmering turkey taco meat in the slow cooker. The … [Read more...]

I don't get a chance to watch daytime TV very often but I do love when I am able to catch the Chew on ABC. If you're not familiar with the Chew, it's a talk show/cooking show on ABC. I personally love it because it focuses on food more than anything else. … [Read more...]

Pesto Chicken Salad

PestoChickenSalad-2

Chicken salad is so personal- everyone makes their own favorite version. I have never loved a heavy-mayo based chicken salad until I had one at a wedding shower a long, long ago- it was made with fresh tarragon, celery and some other basic ingredients. Even though I have come around to mayo-based chicken salads (although I am still super picky about which ones I'll eat) I have been obsessed with this version lately, pesto chicken salad. It's such a nice change from your typical chicken salad and if you are using homemade pesto, it's even better. The great part about chicken salad recipes is … [Read more...]

Corn and Tomato Salad & Meal Planning

Corn and Tomato Salad | www.nutritiouseats.com

I am sort of addicted to this salad. I was trying to come up with a side dish last week when I thought we were out of all vegetables. I found a few sweet peppers, tomatoes and shallots in the drawer of my fridge and I always have frozen corn in the freezer. I think most people have had some version of this salad and often you'll see something similar in a salsa form. I haven't made a corn salad since last summer and this one is a little different because I omitted the black beans and added the sweet peppers and shallots. It's such an easy, super side that goes well with a variety of … [Read more...]

Chipotle Roasted Sweet Potato and Cabbage Salad

Chipotle Roasted Sweet Potato & Cabbage Salad-1

I am so happy to be sharing this delicious Chipotle Roasted Sweet Potato and Cabbage Salad recipe today. I had envisioned making this all weekend and really meant to get a post up on Sunday but it was just one of those days that I literally ran out of time. We got home from mass around 11:30am, the weather was gorgeous- a warm 50 degrees with blue skies and the kids thought it was so warm that they decided to play with the water hose in their swim suits! No joke. My Texas born children now think 50 degrees is swim suit weather. I baked some breakfast cookies that I had hoped to post but … [Read more...]
