Beano Before Your First Bite & Beans and Greens Soup

Beans and Green Soup

The following post is sponsored by Zest Placements on behalf of Beano. I can't tell you how many clients I have worked with in the past who avoided eating healthy foods like cabbage, beans, certain fruits and vegetables just because it caused them to have gas. Although bad gas can certainly be uncomfortable, it doesn't have to be the reason for giving up those healthy foods. Has anyone ever tried Beano? Beano contains a natural enzyme that works with your body's digestion to break down complex carbohydrates found in gassy foods so it helps to prevent gas before it starts. I have … [Read more...]

Kale and Butternut Squash Frittata {Meatless Monday}

Kale and butternut squash...what's not to love? This Kale and Butternut Squash Frittata is one of those dishes that requires minimal ingredients (only 5 not counting salt/pepper/oil) and it's super easy to make which makes it perfect for a quick weekday meal (breakfast, lunch or dinner); it's fancy enough for a brunch or the Holidays too (since it's got those fall flavors).   I was feeling the need to cook and had a couple hours in between picking up my daughter from preschool and my son from elementary school. Tomato Kale Soup and Meal Planning

What do you get when you have a big bag of kale to be used, a husband with a cold and a Dietitian wife trying to make him better? Homemade tomato kale soup! Sometimes the recipes-in-progress take several tweaks or repeats until I get them right which makes blogging tough. It can be expensive and a long evolution so to all those food bloggers that post all (or mostly) original recipes, kudos to you! This soup however, I dreamed up … [Read more...]

There is no reason to be eating boring ol' tossed salads all the time. Let's get creative! First off, kale isn't my typical green for a salad but I think I will start using it more this way. It is packed with beta-carotene and has both antioxidant and anti-inflammatory benefits. It falls into the cruciferous vegetable family so has the same cancer preventive benefits. It is much heartier and more bitter than your typical salad greens but I just … [Read more...]

Sauteed Sesame Kale and Meal Planning

Sesame Kale-1

It seems like the weather is always a popular conversation topic, especially for those of us in the Seattle area. It's the first thing out of people's mouths once they find out we've just moved here. So far July has been perfect. Mid 70's and clear skies. Then this weekend we got a little surprise heat wave- 91 both Sat and Sunday! What!? The majority of homes here don't have A/C for a reason so I am very thankful this will be short-lived. As the kids played outside in the mini pool yesterday I tried to brainstorm my menu plan for the week. My mom is visiting starting on Tuesday so I want … [Read more...]
