
Hi friends! Hope you all had a nice weekend. It’s really starting to feel like the start of the holidays with a drop in the weather and planning underway.
I wanted to let you know there were a couple of errors in the measurements for the Kale and Quinoa Salad because mom wrote the recipe from memory and turns out she was a little off! I apologize if you made it and it didn’t turn out well, but it’s all good to go now.
So I had a good idea. I wanted to make my peanut butter oatmeal bars again, but was running low on peanut butter so decided to try a one-bowl, pumpkin version instead. The took very little effort and they turned out great. Dare I say the word moist (you know the word everyone hates). But they were.


I just dumped everything in the same bowl, stirred it altogether and then into the pan they went. So easy and I am not exaggerating when I say it takes about 5 minutes to make these (minus bake time of course). That’s my kind of baking!
I think the oats combined with the pumpkin puree made was a perfect match because oats need a lot of moisture. Then, even though I’ve always said I don’t like pumpkin with chocolate, I had to jazz these up by adding some chocolate chips. I think some chopped nuts would also be good! But don’t skip the chocolate.

You could set out a plate of these for Santa too. I am sure he’d appreciate something a little healthier.

- 2 1/2 cups gluten-free rolled oats (can sub regular rolled oats if not needing gluten free)
- 1 cup pumpkin puree
- 2 eggs
- 1/2 cup neutral flavored oil (organic canola, avocado, grapeseed, etc.)
- 1/4 cup honey
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup bittersweet chocolate chips
- Preheat the oven to 350 degrees. Spray a 8×8 glass pan with cooking spray. Mix oats through salt in a large bowl together and stir until well combined. Stir in chocolate chips. Pour mixture into prepared pan and using a rubber or wooden spatula, smooth the top out evenly. Bake for 28-30 minutes or until edges are lightly browned. Let sit in pan for about 15-20 minutes. Cut into squares and enjoy with a cup of coffee or hot tea.

Loving this recipe. I like that you added 1/4 cup mini and a 1/4 cup large chocolate chips = chocolate throughout!

As a lover of all things pumpkin, these look AMAZING. And jazzing up with some chocolate chips was a wonderful addition in my opinion as also a lover of all things chocolate 🙂

We just made these because we are trying to remove much of the refined sugar from our food. They are delicious! Even my 12 year old loves them. Thanks for a delicious recipe that has no refined sugar.

What temperature and how long???
I wouldn’t use a 9×13 unless you plan to double it. Same temp. Check them at the same time, but will likely need to cook them a little longer. Maybe 10 minutes? I have not made this recipe in a 9×13 therefore can not tell you for sure. Good luck!

Delicious!!! Thank you Melanie. I added more of each spice because we like spices 🙂 I also chopped a bittersweet chocolate bar because that’s what I had in the pantry. Turned out great. The chopped chocolate melts more than chips so there were small pools of chocolate. Yum!
