Salmon Recipes for the Summer

It is getting close to the time where I can find my favorite Copper River salmon locally, which is a big deal here in the Pacific Northwest. It is the best tasting wild salmon in my opinion. For now I am collecting some salmon recipes because fish is the perfect summer meal. It’s light and it’s so great on the grill. Oh and I won’t be a broken record and tell you, yet again, about all the nutritional benefits of eating it.

However if you don’t feel like firing up the grill, there is so much more you can do with your salmon- toss it with pasta, add it to a salad, make burgers out of it or just top it with a fresh salsa (one of my favorite ways to enjoy it). Change up the fruit and vegetable combinations- the possibilities are endless. I have included some recipes from fellow bloggers as well as from Cooking Light, one of my favorite places to find recipes (check out links for photo credits).

These recipes make me realize I need to branch out a bit with my salmon! I could go on and on sharing recipes so I might need a part 2 of this post! So many great preparations. Now to try some!

    I love salmon too. And I agree, wild salmon is the best. But I wish I could get it locally, that’d be so awesome.

    One of our favorite ways to eat salmon is to make it into burgers. So juicy and full of flavor. Totally feels guilty even though its super healthy! thanks for these other great ideas.
