Hi friends! If you missed my announcement last week, I am doing another round of my 6 week weight loss course starting next Monday the 21st. Ok so moving on to this post I was planning on sharing last week….due to the severe rain, flooding and canceled school for 2 1/2 days here in Louisiana, I wasn’t able to get much of any work done! Having limited internet can be a blessing sometimes though as I tried to enjoy the lazy days with my kids.

I realized I hadn’t used my spiralizer in quite some time. And I have made it a goal to use these crazy kitchen appliances I buy or else I have to get rid of them>>update: I just bought a bread machine and if I don’t use it a few times a week, it’s going to get the boot.

This meal is super easy to make….like most all of the recipes I share. I am a mom of 4, I need easy! Buy your favorite jarred sauce or make your own. Then sauté your ground lean turkey with some onion and carrots, dump your sauce in and season it up with some dried basil and oregano. While that simmers, spiralize your zucchini. Then they only need a quick sauté with some garlic to soften slightly and add some extra flavor.

Spoon that meatsauce all over the zucchini noodles. Top with some good quality freshly grated parmesan cheese, fresh basil if you have it. Mmmm. If you are missing your carbs, serve with a whole grain roll to sop up that sauce.

Dinner in around 20-25 minutes! Even though my kids are not at the “I’d prefer vegetable noodles over real pasta noodles” stage, its still simple to boil them some pasta while the sauce simmers. Quick, easy and healthy weeknight meal. Plus it’s full of lean protein and nutritious veggies!

Serves: 2-3
Ingredients
  • 8 ounces lean ground turkey
  • 1½ tablespoons olive oil, divided
  • ¾ cup diced carrots, ~2 carrots
  • ½ cup diced onion
  • 2-3 medium zucchini
  • 2 teaspoon olive oil
  • 1½ cup marinara sauce
  • ¼ teaspoon dried basil
  • ¼ teaspoon dried oregano
  • 2 cloves garlic
Instructions
  1. Heat ~2 teaspoons of olive oil in a large skillet over medium heat, add carrots, onion and ground turkey. Cook for ~8 minute or until almost cooked through, add marinara sauce, bring to a boil, then reduce to simmer for ~10 minutes while you work on the zucchini.
  2. Spiralize zucchini. Heat ~2 teaspoons of oil in a large skillet, add 2 cloves garlic and cook for 1 minute. Add zucchini and cook for 4 minutes. You want it to be a little tender but still crisp.
  3. Remove and divide amongst plates. Top with turkey marinara and parmesan cheese.

I estimate 1 zucchini per serving.
