Purple Potato Salad

PurplePotatoSalad-1-2+

It looks like delivery subscription services are my thing- I've always loved getting fun mail. So in addition to Stitch Fix, my new obsession is getting my weekly CSA box. It's so fun seeing all these beautiful organic veggies (and some fruit) at my door each week. I also love the challenge of finding out ways to use them. The neat thing is that they send you an email of what is being delivered and they give you enough time to go into the system to make changes. I don't see the need for ever doing that since I like all veggies and really love the variety so far, but it's nice knowing … [Read more...]

Make-Ahead Salad Bowls

VegSalad

Hi friends. Just popping in for a quick visit to share this fabulous salad inspired by Starbucks. That's right, you heard me....a salad inspired by Starbucks! I was in there this week with about 25 minutes to spare before picking up my daughter from preschool. I had our sitter watching the other kids so I thought why not actually go into a Starbucks (rather than use the drive-thru), sit down and enjoy some time to myself. Now I am pretty frugal when it comes to buying lunch out. I have a hard time justifying spending money on food that I usually have at home, but I was curious...and … [Read more...]

Hi friends, stopping in for a quick visit, a quick recipe along with some iphone pics. I'll I have to say is having 4 young children in the house is HARD, to say the least. Do you keep a list of things you want to cook? I suppose that is what people use Pinterest for these days, among other things, but I am a little old fashion. I just keep a list in my planner or maybe if I am feeling high tech in the notes section of my iphone. Fancy, I know! I have had a portobello "cheese steak" on the list for some time now because I adore anything with portobellos, but it wasn't until an old high school friend … [Read more...]

It's meals like this where I could easily be a vegetarian. Quesadillas are one of my many favorite Mexican meals, but I'll never let any of my kids order them at a restaurant. They are far too easy to make at home! First things first, the tortilla. You must use good tortillas when making Mexican food at home and I'll let you in on a secret- Tortilla Land brand tortillas. They are as close to homemade you are … [Read more...]

An Interesting Study & Swiss Chard and Feta Rolled Omelet

EggRoll-Up-8

The following post is sponsored by ConAgra foods. All opinions are my own.  I am sure many of you know that food with more volume and protein can help you feel fuller longer which can be a great and effective weight management strategy. Also, when it comes to weight management, choosing the right breakfast is very important. Today I wanted to share the results of a recent study that was presented at the Academy of Nutrition and Dietetics 2013 Food & Nutrition Conference & Expo (FNCE®), which I thought was quite interesting: it found that calorie for calorie egg whites are … [Read more...]

Beano Before Your First Bite & Beans and Greens Soup

Beans and Green Soup

The following post is sponsored by Zest Placements on behalf of Beano. I can't tell you how many clients I have worked with in the past who avoided eating healthy foods like cabbage, beans, certain fruits and vegetables just because it caused them to have gas. Although bad gas can certainly be uncomfortable, it doesn't have to be the reason for giving up those healthy foods. Has anyone ever tried Beano? Beano contains a natural enzyme that works with your body's digestion to break down complex carbohydrates found in gassy foods so it helps to prevent gas before it starts. I have … [Read more...]

KaleSquashFrittata-2-2

Kale and butternut squash...what's not to love? This Kale and Butternut Squash Frittata is one of those dishes that requires minimal ingredients (only 5 not counting salt/pepper/oil) and it's super easy to make which makes it perfect for a quick weekday meal (breakfast, lunch or dinner); it's fancy enough for a brunch or the Holidays too (since it's got those fall flavors).   I was feeling the need to cook and had a couple hours in between picking up my daughter from preschool and my son from elementary school.
