One of my favorite ways to cook with tofu is this tofu scramble. I started making it years ago when I did my vegan experiment and now, though not vegan, enjoy making it on a regular basis. It doesn't replace my eggs, it's just something different and it's awesome. Tofu, a great protein source for both vegetarians and meat eaters, is normally pretty bland which makes it a great canvas for spices and other flavor additives like garlic, soy sauce and veggies! A hearty vegetable sandwich goes down as one of my top favorite sandwiches ever. There is so much you can do with the flavors in terms of seasoning, fresh herbs, dressing, etc. This one has grilled eggplant, zucchini, bell pepper and red onion and fresh tomato, basil and arugula. Is anyone tired of kale yet? I'm not! It's one of my weekly staples in my CSA box and I love it! I usually sauté it, use it in smoothies or chop it thinly and enjoy it as a salad. I would normally say I prefer pasta over rice, but lately I have been cooking a ton of rice lately. When I was a kid I loved eating plain white rice with butter. However, I wanted to cook something a little more special than buttered white rice for our Friday night grilled salmon dinner. The fun thing about being in charge of the food around here is that I get to cook whatever I feel like eating! Pasta with veggies tossed in a peanut dressing. That's what I wanted. It looks like delivery subscription services are my thing- I've always loved getting fun mail. So in addition to Stitch Fix, my new obsession is getting my weekly CSA box. It's so fun seeing all these beautiful organic veggies (and some fruit) at my door each week. I also love the challenge of finding out ways to use them. The neat thing is that they send you an email of what is being delivered and they give you enough time to go into the system to make changes.
