Cajun Sausage and Vegetable foil packs are not only super simple, but delicious too. I just LOVE meals I can assemble in a hurry. Which is pretty much every night around here!

I have heard from my social media world, that people no longer read blogs, but rather just skip to the recipe or whatever info they are seeking. Some people actually get annoyed with us bloggers for sharing words??!! (Insert shocked emoji)

But that won’t stop me so let’s talk about just how easy this recipe really is? The easiest!

No standing over the stove top, or hot grill. Simply cut, season, stir and fold up your foil package.

These super simple cajun foil packs are my new favorite and my kids enjoyed them too! When I make them for the family I make a side of rotini or penne pasta (seasoned with a little oil, butter, garlic powder, s&p) to go along with them, but you don’t need a grain. You could also make some plain rice, but you could always add a side salad to fill you up.

Back to school is happening soon and we need all the simple recipes we can get.

Serves: 4
Ingredients
  • 12 ounce smoked sausage link, cut into slices (I use a venison blend)
  • ½ small head of cabbage (I used purple), roughly chopped
  • ½ large yellow onion, rough chop
  • 1 red bell pepper, rough chop
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun or Creole seasoning (see notes)
  • 1 lemon, cut into wedges
Instructions
  1. Preheat oven to 400 degrees. Toss sausage, cabbage and onion in a large bowl with 2 tablespoons olive oil and 1 tablespoon seasoning. Using 3-4 large squares of foil, divide up mixture, seal up foil packets tightly, like a package. Place packets on a cookie tray. Bake for 20 minutes. Before serving, open packets, squeeze with some lemon juice and enjoy!
Notes
The amount of sodium varies greatly amongst the different brands of Creole/Cajun seasoning. Look for lower sodium seasoning. I use a Creole seasoning that has 190mg per serving, which is still plenty.

    Love how colorful that purple cabbage is!! I’ve actually never tried roasting/cooking cabbage before.
