Raspberry Chia Parfait

This Raspberry Chia Parfait is a fun and easy nutritious breakfast that is gluten free. Customize to your liking with a variety of fruit and nuts. Great for meal prep too!

Raspberry Chia Parfait in a cupI love parfaits for their ease of making, convenience and versatility. When you have plain Greek yogurt as a base, you can combine it with any of your favorite fruits, nuts and spreads to create a winning breakfast!

Raspberry Chia Parfait

To make this parfait you will layer yogurt with a simple chia pudding which is just chia seeds mixed with coconut creamer (any type of milk would be fine too). Typically I would sweeten my chia pudding, but it’s not necessary here. Top each layer with raspberry jam, raspberries and almonds, a drizzle of honey and dig in!

Plain Greek yogurt is such a versatile food and I love that it’s packed with protein. The Chia seeds and nuts add extra fiber and protein as well.

I wrote out the measurements for one, but then you can make as many as you’d like. They are great for storing the refrigerator as part of your meal prep. I have made parfaits, even with grains like granola, and the kids take them in their lunch boxes.

You can use a flavored yogurt too, but the jam and honey drizzle will bring plenty of sweetness to the cup.

Off the topic of parfaits, San Antonio has gotten a ton of rain lately which means food photography has been nonexistent. Thankfully I got some nice shots and simple recipes like this done when I went to Foodie Bootcamp!

Ingredients
  • 1 (5.3 ounce cups) plain Greek yogurt
  • 2 teaspoons raspberry jam, low sugar
  • 2 tablespoons Chia seeds mixed with 2-3 tablespoons coconut creamer (or nondairy milk- it will absorb the liquid after a couple minutes. Add more milk if needed)
  • ½ cup fresh raspberries
  • 2 tablespoons slivered almonds
  • Honey
Instructions
  1. To make one parfait: use a small glass or cup, layer half of a container of plain yogurt, 1 teaspoon raspberry jam, ½ the Chia seed pudding, top with ¼ cup fresh raspberries, 1 tablespoon slivered almonds and repeat layers. Top with fresh mint and a drizzle of honey. Make as many as you like to store for meal prep!
