Kitchen Memories: Make-Ahead Breakfast Casserole

BreakfastCasserole-2

Food is a wonderful way to express love. Whether it's having company over or cooking for loved ones, it's meaningful to serve something homemade. It's even more meaningful when you get to cook with the ones you love, like family. This breakfast casserole reminds me of family. There are multiple occasions where I remember my mother-in-law or one of my sisters-in-law standing around the kitchen preparing this for the next day's breakfast. In fact every other year we vacation together in Hawaii and this is the summer we will go again. Words can't express my excitement to get back … [Read more...]

Egg Stuffed Baked Potato

EggInPotato-2+

Hi friends! I can't believe it's Friday. Truly, this week flew by. Allergies. Illness.  Sleepless nights. That pretty much sums up my week! My lil' guy caught a cold, not a big deal, but that caused him to wake several times for several nights. Little baby E had her 4 month check up and did not tolerate the immunizations as smoothly as she did at 2 months. She was super fussy and ran a fever all through the first night. She was miserable. More sleepless nights for me! Then I either caught what my 2 year has or just have allergies, weed pollen is very high right now so it could … [Read more...]

Chocolate Chip Cookie Balls {Vegan, Gluten Free}

CookieBalls-3+

  The world of blogging really jumped on the snack ball bandwagon. I am pretty sure you'd be hard-pressed to find a food blogger without a "ball" recipe on their blog. And for good reason. They're the perfect snack. I started making balls over 6 years ago  (sorry if "making balls" sounds weird to you, but I simply can't call them anything else) when we were living in Austin and I wanted snacks to have on hand while I was nursing my firstborn. I made them very simply with peanut butter and oats and dipped them in melted chocolate. To this day they are one of my favorite … [Read more...]

Roasted Salmon with Leeks

RoastedSalmonwithLeeks-1+

Do you ever watch the show Chopped? I went into labor with my third child watching that show. My weekly CSA is much like opening the mystery basket. I don't pay much attention to the emails they send of what's being delivered so it's always a fun surprise. I like to challenge myself to come up with a dinner using something out of the CSA box. No recipe searching, just quick cooking. I had a defrosting piece of salmon waiting to be cooked so knew the leeks would pair perfectly with it. Leeks are relatives of onions and garlic and are absolutely delicious. They look like giant scallions … [Read more...]

Hasselback Potatoes with Garlic and Herbs

HasselbackPotatoes-1+

Hi friends! I ended up with a short blogging week last week because my mother-in-law was visiting. You would think I would get more done with family in town but I prefer to take the time off rather than hide out in my office trying to catch up. It was great having her, but now I am back to business! Hassleback potatoes, did you know that is what they're called? These accordion-like spuds were named after the Stockholm restaurant that first served them, Restaurant Hasslebacken. I have been wanting to try these for ages, I'm sure you've seen them all over the blogosphere. I have seen them in … [Read more...]

Mini Cherry Cheesecake Bites

CheeryCheesecakeBites-3+

As magical as pregnancy can be, I am just about ready for this one to be over- 38 weeks, tired, uncomfortable and in need of a good workout (and a good glass of wine!). I am not even that excited about Holiday eating because there isn't much room in my belly for it. What I am saying is I don't think this will be my year of desserts. Maybe I will save the splurge calories for post-baby when I have room and am burning even more calories nursing. I do love a good cheesecake so I might make an exception for my favorite pumpkin cheesecake....but when I was thinking of cheesecake I remembered … [Read more...]

Thanksgiving Leftover Potato Pancakes

Thanksgiving Leftover Potato Patties-1+

Hi friends! Just stopping by quickly to wish you all a Happy Thanksgiving! I hope you have a relaxing long weekend (hopefully most of you don't have to work) and eat lots of yummy food. I also wanted to share a recipe that you can use with your leftovers on Friday. Great for breakfast, lunch or dinner- Thanksgiving Leftover Potato Pancakes! I was lucky to have my mom visit from Texas last week for a quick visit. I wasn't sure if the kids and I would have plans for Thanksgiving (turns out we do), but she offered to help me cook Thanksgiving dinner. We figured if we stuck to the basics it … [Read more...]

Pumpkin Cheesecake Bars

Pumpkin Cheesecake Bars+1

Congratulations to the winner of the goodie food box Jessica F. you have been emailed! I finally busted out the pumpkin this week. I already feel like the month is off to a quick start so don't want to waste any time! Pumpkin desserts are one of my favorites this time of year- pumpkin cheesecake, pumpkin pie (of course), pumpkin swirl brownies and these pumpkin cheesecake bars. I just want to warn you that the majority of the dessert I post or will post over the Holidays are "splurge worthy" recipes. I don't do anything super crazy to lighten up desserts because I don't … [Read more...]

Vegetarian Hummus Pita Pizza

Vegetarian Hummus Pita Pizza-1*

Toasted pita bread and hummus reminds me of my college roommate and friend-turned sister-in-law (how fun is that?). She used to eat it often and it became one of our quick lunches in between classes. The lightly warmed and toasted pita was so good with a smear of hummus on it. I thought this time I would turn it into a more filling meal by adding some sauteed vegetables. This is a delicious vegetarian meal great for lunch, dinner or as an appetizer! You can easily make it vegan by omitting the feta cheese. You could also saute the veggies ahead of time, mix in the olives and feta and … [Read more...]

Chocolate Banana Soft Serve “Ice Cream” {Vegan}

Banana Soft Serve Vegan "Ice Cream"

Hi friends! I am back from vacation and am up to my ears in things to do. I haven't shared this news yet because I wasn't sure I wanted to, but I think I need whatever support I can get. My husband will be deploying soon (because of privacy/safety reasons I won't say when) but we have a lot to do before he leaves. I don't know how I will ever get through this "to do" list or being without him for that matter. Of course being pregnant makes this time much more difficult and emotional but I am trying not to think about it too much. For now, we just need to get prepared so that I can feel … [Read more...]
