Pumpkin Chai Spiced Oatmeal

Nothing says fall more than this protein-packed Pumpkin Chai Spiced Oatmeal, gluten free and vegan!

If you are like me and you bake with pumpkin, there is almost always a little leftover in the can. What to do with it? Here is one simple way to incorporate it into your breakfast with this Pumpkin Chai Spiced Oatmeal.

When fall comes, I definitely eat more oatmeal, like this Steel Cut Apple Oats or these Overnight Steel Cut Oatmeal.

However, nothing says fall like Pumpkin Chai! It’s a simple oatmeal recipe, but I made it a little more protein-rich by adding some vegan Chai protein powder.

Arbonne’s Chai protein powder is a seasonal, limited edition flavor. It has the same high standards as the rest of the Arbonne products- formulated vegan, gluten-free, and free of over 2,000 harmful ingredients! There are 20 grams of easy to digest plant-based protein (that’s 20 grams in 2 scoops) and it’s free from artificial colors, flavors, additives.

So what is the protein made from? It is a blend of pea, rice and cranberry protein and comes in 2 other flavors- chocolate and vanilla. We use this protein powder in our daily smoothies as well energy bites. Let me tell you, I was not a big fan of protein powder before, but I love this one!

I’ll let you in on a secret, I enjoyed the second bowl of leftover cold oats almost more than the hot ones, so you can always make this a meal prep item.

Ingredients
  • 1 cup rolled oats (gluten free if needed)
  • 1 cup vanilla unsweetened almond milk
  • ¾ cup water (plus extra if oatmeal is too thick)
  • ⅓ cup pumpkin puree
  • 2 scoops Arbonne Chia protein powder (could sub vanilla protein powder)
  • ¼ teaspoon ground ginger
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • For topping:
  • additional cinnamon
  • 3 tablespoons chopped honey roasted pecans
  • 2 tablespoons dried cranberries
Instructions
  1. Heat water and milk in a small saucepan, add oats and bring to a boil, reduce to simmer for 5 minutes. While oats are simmering, stir in pumpkin puree, Chia spiced protein powder (vanilla would work too), vanilla extract and spices. If too thick after 5 minutes, add a few more splashes of water or almond milk. Divide amongst two bowls and top with chopped honey roasted pecans, cranberries and additional cinnamon.
Notes
Store leftovers and enjoy as overnight oats, eaten cold.

    Such tempting and delicious pictures of oatmeal with chia seeds. I’ve recently gotten into chia seeds and I love the crunch they add to my yogurt. I’ll try them with oatmeal as it gets cooler! Beautiful photography!
